That's the case in most of human history, historically meat was more of a special occasion and luxury food (only the upper-class regularly ate it). It is costly in both time and resources to raise livestock, and there wasn't refrigeration readily available to keep large amounts of it on hand all the time. It wasn't until the 19th and 20th centuries that meat became a food that even the lower classes could have more regularly. For example in middle-ages Europe it was common for peasants to just have eggs, dairy, peas, and fish (if you lived near a river or sea) as primary protein sources, with only occasional meat (a couple times a month, from hunting/trapping game or raising chickens, or small amounts of cured meats from previous slaughters). For peasants, larger livestock (geese, cows, and pigs) were raised to be slaughtered only on very special occasions or holidays (Easter, Assumption, Christmas, and individual saint's days, as every region followed their own little "pantheon" of saints they considered important).

Love this dish! If you go vegetarian, dairy (cheese!) and eggs are ok. But vegan is strictly plant-based.

There's actually different types of vegetarianism. A plant only diet is vegetarian while lacto/ovo means you also eats dairy and egg products. Others also eat white meat and/or fish aka pescatarian. Vegans, on the other hand, are pretty extreme. It's more of a lifestyle. They cut out all animals byproducts i.e. pillows and coats that are padded with feathers, soaps made with gelatin, products that use animal testing etc etc. They need to do a LOT of research.... never ending research. Regardless, it's still recommended that everyone takes omega3 fish oil and vitamin B supplements since our body can't make them on their own.

I never knew that Bibimbap could be so simple. Before watching this video I thought I had to line up at least 6 different types of vegetables to create a bibimbap. Made this for lunch today. I added spam and only used oyster & enoki mushrooms (what I had in the fridge). Thumbs up from the family. Oh, for my first plate, the heat was too high even though it was medium heat and the bottom became scorched rice. :)

No anchovy stock if you go vege! Kelp only! 🤣 my boss doesn't eat meat (seafood included) or eggs or if i make her Korean food kelp stock is a good alternative. Also Jin Ramen CUP noodles are vegan but the full packet ones aren't they contain powdered seafood. From a full on meat eater lol.

You can have the egg as a vegetarian, just not as a vegan. It looks delicious. Unfortunately, I don't have access to multiple varieties of mushrooms here, but I still think it would be good with some cremini/brown ones.

I wonder how to get the fried/roasted rice at the bottom of the bibimbap bowl, if I'm simply cooking at home? :) that's the essence of the bibimbap for me.

The toasted rice will occur... just let it steam it in the pan for longer at slightly higher heat.

Hmm... you can serve it in a Ttukbaegi at the end if you'd like it nice and hot - good idea!. But the Ttukbaegi is probably too small for mixing-in the rice with the mariande (or steaming the rice)... need sometning bigger.

I'd recommend to substitute the fish sauce for a bit of veggie stock powder or a bit more salt, around 1/2 teaspoon. I don't like adding extra soy sauce cause sometimes it gets too strong

국간장/guk ganjang/soup soy sauce is probably the best substitute for fish sauce, maybe with some seaweed thrown in. regular soy sauce is too strong to substitute for fish sauce.

In Australia we have an awesome vegan fish sauce that tastes exactly like the real thing, it's called 'cocomino fysh' made from coconut aminos! See if you can find it online. I use it all the time it's amazing!
