Thanks for the helpful video! :) Pardon my ignorance, but I was wondering: what's the point of offsetting a path when creating a stroke does the same thing? Like in what circumstance would it make more sense to offset a path instead of just adding a stroke? Thanks!

The problem with using strokes is that it adds unnecessary steps. You'll have to duplicate the object, add the stroke, and then convert the stroke to a path before continuing on as you would with an offset. And strokes only allow you to increase the offset, not decrease it.

By the thumbnail I thought you were going to off set the path of the rings on the outside without doing the inside as well. Need that.

That would work the same way. You'd just have to add a stroke to the offset path afterwards and then remove the fill color.

I realized just now that you cant off set an open curve in Illustrator. it'll work like an 'Outline" function. Stupidest thing ever!
