You should explain what 80% cooked looks like. Most people won't know it'll be somewhat translucent with a white center on each grain. You also added an ingredient without saying what it was.

It takes too long my friend. Over 30-40 minutes and not worth what people pay for it. We cook it 80% and then spread it thin on a flat surface to cool it down and stop it from cooking further. From there you have a base portion that would last 2 days max depending on the quality you want to offer. Saluti da Napoli.

I’ve recently discovered a love for risotto. What is the shelf life for par cooked Arborio rice? Say if I made some on Monday could I enjoy risotto on Wednesday or Thursday?

If you accidentally bought arbirio rice you can cook it like regular rice. The ratio is always safe at 1 cup dry rice to 2 cups liquid. You can use virtually any liquid you want. Water for plain rice, stock for some flavor. With water, add 1/4 tsp of sea salt for 1 or 2 cups of rice. Add rice and liquid to covered pot and bring to a boil. Once boiling, turn off burner and leave covered for 20 minutes. Do not remove the lid even just to peek. You need to keep all the steam inside to completely rehydrate the cooked rice. I hope that helps.
