You are definitely right. Algeria has 58 Provinces, and each Province does it its own way. Le Couscous a pour origine le Nord de la Kabylie en Algerie. The word couscous is purely Algerian Berber.... Couscous is a purely Berber dish as evidenced by the writings of French researchers. Of course and as usual, other countries in the region wanted to appropriate the creation of Couscous. This brought the great Algeria by generosity and to avoid their whining (they whine for everything) to decide to include these countries in the list of countries of Couscous. Exactly, my family is Kabyle of Algiers and my mom had a few recipes. 1. Yennayer couscous with chicken and legumes (beans, chickpeas, lentils, etc) 2. Kabyle couscous with lamb / beef red sauce and vegetables (sometimes with green string beans) 3. Algiers couscous with lamb white sauce and turnips (that no one like lol), zucchini and chickpeas 4. And my absolute favorite : mesfouf b lben. With fava beans and green peas 5. Tama9foult with small pieces of carrots potatoes green herbs: this is an old traditional dish that I don’t really like but my dad loved it For most Algerians couscous is life ❤️

@FusionMaster. Morocco did not cultivate durum wheat (blé dur) until the 20 th century. It is the basic ingredient to prepare this dish. Couscous was a staple food in Algeria, Tunisia and Libya for at least a millennia. So you obviously copied it. Your historians say so, not me. hello, Couscous spices are basically Pepper, paprika, Ras El Hanout ( a mix of spices used in couscous), some cinnamon and that's it, if you are in a place where you cannot buy Ras El Hanout, then use Coriander powder and curcuma. Happy cooking!
