Preserving tomatoes with ash is a traditional method from hundreds of years ago, before refrigerators existed. Ash has high antibacterial properties, so the tomatoes are protected from rot-causing bacteria.!!!!

We were at my daughters house helping her finish her sheetrock job. A tomato we bought and didnt eat had gotten a very light dusting of sheetrock dust on it. It sat there for a week, then brought home layed it on counter and forgot about it. 3 weeks later we washed it and cut into it. It looked, tasted, and felt like a brand new tomato. Now i know why.

I cannot say for sure but it was probably either potato starch or wheat flour plus rice flour. Rice flour makes the food extra crispy (I use it in batter fried fish.) As for the greens my guess is some kind of dried seaweed.
