Why open the bleeder valve? Why not just take cap off the reservoir?

Wish I could get my upper 15mm bolt out of mine but the boy that owned it before me rounded out the bolt so I'm gonna have to take mine to a garage to have them changed, which sucks cause I was trying to save myself some money on doing it myself.😢
