I really like that you use old fashioned BBQ. The grill, the eating. No fancy frills. That's some great camping food. Back to basics.

indirect, charcoal on one side. We used about 2 chimney fulls, about 150 briquettes added in two stages for this low and slow. When temp went below our minimum, we added more pre-lit and adjusted the vents to keep us at 275f. -BBQ Pit Boys

....to clarify, too much "smoke" will make the meat bitter. If you see smoke pouring out of the smokestack, or grill in this case, you'll be disappointed in the results. Keep the smoke light, barely viewable for best results... -BBQ Pit Boys

I have always done my ribs whole on my 22.5 Weber grill or smoking.I gotta do it this way now. This way is an awesome easy party way to do it. Serve right off the grill! Plus everyone can get their ribs the way they like em. Pit boys schooled me again.

You guys helped make my my family and friends very happy this Memorial day. Normally, our small grill wouldn't be able hold many racks however with this technique I was able to triple or even quadruple the amount of ribs. However, I did a sort of green chili thai coconut marinade with a pineapple glaze. Thank you Pit boys!

@MrBlair56 YES, indeed it does. Propane is actually "liquid propane".. also known as LP. The very name of liquid propane signifies moister air than charcoal. So the meat will definitely carmalize more by dry heat. It is something like 1/2 to 1 cup of water that is released during cooking when using propane every 10 minutes, depending on BTU's of the grill. Also propane needs more air circulation, so although you can "smoke" with them, a charcoal grill smokes better.
