Does that first adjustment determine the length of screws you're going to use?

No. The first thing you set,sets the thickness of the material you're joining. The thinnest setting is for 3/4" material and u use 1 1/4" screws.

Which model kreg jig?

Pretty sure it’s the 320. I bought one for ~ $40 US, but it didn’t come with the clamp. In the short he refers to “the supplied clamp”. I’ve seen the same basic kit come in a package deal with the face clamp, so he must have gotten that.
