As a person of Dutch descent, the cookies are pronounced like this. Spake-u-lass. ☺️ Anyway, I'm trying these for the first time and my Dutch cookbook says to oil the moulds. I've read a comment that it will go rancid over time. Also, I have made one last night and I found that when the dough is colder, it works better. And every culture I find has specific great pastries that other cultures don't make the same.

Have you used it to emboss rather than pushing dough into it? I've seen people roll out dough, press the embosser into the dough to form the front. Then use a knife or cookie cutter to cut around the design. ❤

What is the difference between using rice flour and regular flour? Is it finner?

since rice flour is gluten-free it is less likely to make the cookie tougher vs the addition of extra wheat flour. I also personally find that the rice flour makes the cookie less likely to stick to the mold vs wheat flour

I'm teaching myself to make cookies, can someone tell me what kind of brush she is using for the egg based glaze? Is there something else that I can use just as well that doesn't require a trip to the dollar store? 😅 Also, I've never thought of using a brush for the flouring, I'm used to drop biscuits. I learned so much in 17.18 minutes😅

I am happy to hear that! My husband is Hungarian and in their recipes for honey gingerbread they use raw egg yolk immediately after baking to achieve the yellow glaze. Although the eggs we buy are pasteurized and the yolk is getting cooked on the hot cookie surface ... you may not be comfortable with this method. If not you can use yellow food color gel or powder diluted with a little vodka or lemon extract. I use anything from new paint brushes to pastry brushes to a goose feather brush (from Hungary) to brush the glaze on. Thank you for watching!

I’ve been searching for honey gingerbread recipes & many I’m finding include honey almost as an afterthought. There’s still regular sugar in the dough. Would you be willing to share your recipe? (Your St. Athanasius cookies look beautiful and I’d like to be able to be successful with the right proportions in my mold.)

I didn't need to do anything to pretreat the wood! I just dusted with rice flour to keep the dough from sticking

It will but after testing cornstarch/cornflour, flour and rice flour I thought rice flour worked the best and was easier to brush off

I have a question please. I just ordered a wooden flower mold, but I am just searching how to remove it, without destroying it. You seem very informative. But I am wondering, if I could use powdered sugar instead of flour. I don't want to mess with the chemistry of the recipe. Your thoughts? Right now, I am trying to clean out all the excess dough in my mold. Thanks.

Thank you for watching and for reaching out. In my experience the powdered sugar made the dough stick to the mold. I had more success with all purpose flour or, even better, rice flour

Are you sure that egg wash doesn't go on BEFORE you bake them? That egg is raw for consumption.

That is a very good question. In my research of European gingerbread especially those from Hungary they would add the egg wash and coloring directly after baking. I was surprised as well. I believe since the egg wash is applied when the cookie is still hot and in a very thin layer that it “cooks” it so to speak. I wanted to replicate this traditional method of adding the egg wash after baking but if you are uncomfortable certainly don’t do it this way. You can also of course apply before baking for a different effect.
