I'm a regular user of Apple Notes as my main daily notes app. The one thing I don't like is that if you create subfolters and put notes into them, the number of notes into the main folder shown on the left menù column doesn't reflect the total numbers of notes (notes into main folder + notes into subfolders of that specific main folder) but only the notes into the main folder itself.

One thing I don't like with Apple Notes is that you cannot make a Smart Folder a subfolder. I would totally make a Smart Folder a sub folder in some categories and just make it recent notes in that category but whatever.
