I think you missed one feature, the DCA Spill in theright-hand-section. When you go to the DCA's there you can select one and it automatically shows you the spill of all channel assigned to that DCA. Especially on a Compact thats a great help and feature

We sold our X32 Rack but I still have our band scenes on X32 Edit. Is there a way to copy those scenes to the Wing Edit app?

Can we run from a wing full-size via Dante to an X 32 compact or wing compact however many channels we’re wanting to send so we can have a good mix down and a physical hardware controller at video instead of having to use front of house to do both video and front of house

If I am reading this correctly, you are asking about having a mixer for doing a stream mix and not remotely controlling the Wing. If that is the case, you can use a Dante card or the AES50 ports since you are staying within the Behringer/Midas ecosystem. Depending on your I/O requirements (what kind of stageboxes you are using) it may be a bit easier to use the AES50 ports since they are built in already and don't need to shell out another $1k for Dante cards unless you need to expand the I/O of the Wing. There are some videos on youtube that demonstrate connecting a wing and X32 through the AES50 ports for doing the kind of stuff you are talking about if you want to learn more. Just be mindful of the ports and sends. Now if you are planning on remotely controlling the Wing for the FOH mix, that is a whole different thing.

We will be utilizing all AES50 I/O. I will need the Dante connection or stage connect connections, from the wing. I am wanting to send groups and specific channels. Just need to know if that is possible. If running Dante.. use the wing Dante card into a switcher, switcher to live stream console, and my recording computer. Will I need the x32 or wing Dante cards for the live stream mixer?
