Chefs Jaret Foster and Mona Johnson combine their love of seasonal ingredients, open fire cooking, and nature with their roving kitchen, Tournant. By creating the moveable kitchen-bringing with them a number of different grill beds, cast iron pans, and other apparatuses for open fire cooking-the duo prepares all of their catered feasts and events outside, over an open fire, anywhere in the Pacific Northwest. Here we see them create dishes like cedar roasted whole salmon, smoked pork, fire-roasted mussels, roasted lamb shoulder and vegetables in a giant cast iron dish, and more.

That fish was NOT swimming 24 hours ago. By the look of those gills, it has been dead for at least 4 to 5 days. Coming from an experienced commercial and recreational fisherman. Find a fishmonger you can trust to sell you something fresh.

I would guess the aspects involving the fire/smoke and actual logistics of the cooking process represent the masculine aspects, and the planning (contemplation of flavor combinations and aesthetic variations) as well as presentation of the meal could possibly represent the feminine aspects? 🤷🏾‍♀️

I roll my eyes every time I hear the words "essential oils", especially when food is involved. And call me crazy, but I'm not using anything from a pine tree as a smoke or fuel source when cooking food. Probably not a ton of sap in the actual boughs of a pine tree, but if there's even a chance, I don't want it near my food lol.

Please provide us with a link to the manual of all and every native american practices, be sure to include everything that is NOT permitted, and especially the date / time when native american methods stopped evolving and are now obviously frozen in time. Forever. Should be an interesting read.

Ahhhh I'm Croatian and did a little dance in my seat when you rolled out the peka. I was watching for ideas for my future farm and most people have never heard of peka so I was shocked and delighted. Everything looks delicious!

More like discada with a another discada inverted and external rim attached for coals. Dutch Oven will perform same function but wouldn't be as impressive presentation on the table. Maybe 2 of these with a coals ring and alignment ring welded to one for the lid. Not cast iron but the heavy gauge steel would work. It'd be "really" impressive for a one pot meal.
