Eggpants as well as pretty much any vegetable can be salted in barrels and ketp in a cellar. I don't think many people use this way nowadays, but if you have a couple of barrels and a celllar you can try. My grandmother used to do it. Actually this way is quite time-efficient. No slicing-dicing or peeling. But you do need a cellar or any place where the temperature is low but not feezing.

By the time you canned them were they not mushy??

They are raw so they didn't go mushy quite the opposite, they were not boiled just in olive oil and they last up to a year...

Looks delicious, I might try this even if I don't have extra eggplants, looks like a winning recipe. Is peeling the outside a must? Is this added to salads, sandwiches, eaten as a snack, or something else? Can/should it be cooked? Stay amazing! 🎨❤🎨 P.S. Hi Ciliann! They're normally eaten as they are in a sandwich or salad. Yes peeling is a must. And dont forget to wait a month before trying. They're delicious and well worth the effort and wait.😁 Thanks for the tip..reported it as spam.
