Lots of good stuff there.... I've guided 130 successful Elk hunts and everyone does have a bit of different methods and tricks. This would be a conservative standard breakdown. Very handy and knowledgeable about it My personal tip is that on the front shoulder, I like to leave all that neck meat (neck roast etc) from the ear back connected to the shoulder so there is very little loose meat - this keeps it cleaner, packs better with a bone in supporting it than loose dead weight meat at the bottom of a pack. Supported it helps balance raise the weight higher in the pack and on your back - less hurt on the low back. I also do a separate special cut so the brisket comes out whole for the hunter as a special treat if they have a smoker and then I do what's called a Rib Roll where by everything from the flank Steak forward (rib meat and all) comes off as one whole piece of boneless rib meat. All the rib meat should be taken off. Nothing should be left behind that can be used. I have, but not very often taken the tongue out too when I have a local or natives to give it to even if the hunter doesn't want it. I would have liked to see you take more of the usable meat off the ribs and not leave the flank steak etc behind. That's 15-20lbs of meat left behind. If you do that rib roll you don't have to fight the pressure as much in that cavity taking out the loins because that's already been released and it's easily pushed out of the way. Fewer the pieces of loose meat the better in a pack out situation. No use for a saw like he said but I do keep a Cutco serrated knife in my pack in case a joint does give me a small fit. I've done the same method alone or with 4 guys... The break down is still the same. Good work and happy hunting!

I have seen 100+ field dress videos and this is - if not the best - is one of the top 5. I have the biggest respect for your knowledge and professionalism. Where I come from (Scandinavia) it is a MAJOR thing that the meat is not cooled before the energy (rigor mortis) have left the body. "If the meat is cooled down before, it gets tough". That is just the total opposite in more or less all videos I have seen from US and I refuse to belive that all hunters in US would accept a tough meat. They had it good. I just did this alone, on steep brushy ground by headlamp. Having a flat open spot,with help would be awesome. Good video. The flank, rib and neck meat take some time, but are worth the effort too.👍

anyone trying to do this for the 1st time or the 20th its way easier to take the guts out. only takes about 15 mins and you can remove meat way easier. AND don't forget to take all the rib meat. gutless method sucks and your don't get as much meat off the animal that way

It’s a good job but yes, both boots and pants hitting it. Also, I prefer to change my gloves after I cut the hide away. I will change gloves a few times and I use two knives but will rinse and wipe after hide cutting. Great job showing the process.

Remember all that fat you trim off in the field means you will have to trim off meat when you go to cut it .

It's the woods. It didn't go to waste, it just didn't go to their plate. As long as they got all 4 qtrs, the loins and head/neck I'd call it a day too. Those ribs are one more trip on top of at least 2 out and they have minimal meat in them compared to the rest of the animal.

@Elk300 you need to learn how to sharpen a knife then. Further more, your knife does not need to be 'scaple' sharp. You can cut up an animal with a sharp rock if needed. 2inch cutting surface vs 6inch cutting surface, its a simple concept really.
