Drunken Chicken is a famous traditional dish in Jiangsu and Zhejiang. Although many people have heard of it, they have never tasted it. This dish is famous for its rich aroma of drunken marinade and the tenderness and flavor of chicken, and the production process is very simple, just follow the recipe in the video and complete it in a few simple steps.

First, we put the chicken legs into the pot, add green onion knots, ginger and some cooking wine, and turn on the fire. When you see small bubbles appearing on the surface of the water and strings of bubbles appearing from the bottom of the oil pan, immediately lower the heat and cover for 6 minutes. Then turn off the heat without opening the lid, and continue to soak the chicken legs for 15 minutes.
Next, make the drunk marinade, first sauté the spices until fragrant, after two or three minutes, add water, scallion knots and ginger, boil and then turn to low heat and simmer for 5 minutes, then add rock sugar, salt, white wine, distilled marinade and rice wine. Taste the taste of bad stew, it should feel salty. Pour the drunk marinade into a large bowl, add the cooled chicken legs, cover with plastic wrap, and refrigerate for 4 hours. If you want to eat it faster, you can cut the chicken legs first, and then put them in the drunken marinade for 2 hours.
It is also very simple to make Shanghai white chopped chicken. Brush the chicken legs with sesame oil, refrigerate for 30 minutes, and then cut into small pieces.
Finally, cut the chicken legs marinated in drunken marinade, put on a plate, drizzle with a little drunken marinade, and then garnish it. This kind of drunken chicken is tender and smooth, salty and fresh, and has a light aroma of wine, which is very suitable for summer enjoyment.
Special reminder, if the chicken legs are cut and then marinated, the space of the container can be saved, and the amount of various seasonings in the recipe can also be reduced in the same proportion. The used drunken brine can be boiled and preserved, and can also be used to pickle drunken shrimp, drunken crab and other delicacies, making full use of the ingredients.
