Dear Rachel I’m from east Los Angeles and love Mexican food and learned to cook it pretty well. What I love about your teaching method is that you come straight to the point and don’t do any unnecessary chatter that distracts me to learn. Also, you are precise and take your time to bring out the best flavors. I have to eat gluten free. Can I make tortillas with gluten free flour? Corn tortillas can be made gluten free. Look up a cassava tortilla recipe if you are looking more for a flour tortilla. I hope that helps! 😊

Hmmmm, all this time I've been scrambling eggs like this and I had no idea it was a traditional Mexican recipe! LOL, seriously. When I want a Mexican flavored scrambled egg....this is what I do, bu usually I only have jalapeños on hand, and I like to add a little cheese to mine as well. Great recipe!

The hock Rachel used is what I use..I also like the outside texture..so when you go to the store..80% of the time when you ask the meat clerk for a pork hock..they will direct you to a shank..many use those in beans too..even in the meat dept. there is confusion is a pork hock a pork shank..I worked in the meat dept..so I dealt with everybody in disagreement..most people don't realize there are both..typically they buy the shank..because they don't realize the flavor the pork hock has..plus many stores don't carry the hock.. Rachel is calling it correct..in my book anyways..hope I made sense..
