“They” can be used as a singular pronoun when gender of the person in question is unknown. Obsidian was only speaking about Agate missing using singular “they”. Saphire’s vote was delivered via Pearl, she was the one that placed it and described Saphire’s reasoning (oath). In the end sequence where art of each Stoneheart is shown we don’t see much of Saphire as their face is obscured, but broader frame of the body suggests that Saphire is male.

During the vote, 3 stoneheart didn't show, which is Agate, Sapphire, and Amber. Obsidian is repsenting for Agate. Pearl was representing for Sapphire and Amber. You can see the same hand the dropped Sapphire' gem was also the hand that dropped Amberand Pearl's gem, and later we see the full silhouette of Pearl, which tells us that Pearl was also doing the votes for Sapphire and Amber's place. Sapphire is likely a dude given the silhouette we see at the end of the trailer.

If I’m remembering correctly Diamond is an emanator or Qlipoth (the preservation’s aeon) so he is the one responsible for creating their cornerstones and that’s why when Adventurines stone is fixed the scales become diamond textured
