Botulism doesn't grow well in meat, actually. You need liquid water or syrup in a completely anaerobig environment to culture it properly :P

As a Guga fan and food enthusiast, I love these crazy experiments. But, as a microbiologist and food engineer, I think you should start getting advice of a microbiology lab and test a sample of these crazy steak experiments. Just to be sure you really don't get ill, because some of the foodborne illness can be really nasty.

Taro is not a potato. Not even same family. And burying it for an hour is a red herring. Had Guga left it underground the taro would rot and the steak with it.

Buried it.. for an hour. Then, immediately moved it to a proper dry ager. Yeah, that makes the title feel real dishonest. "I dry aged steaks in shredded potatoes and yam" would be more accurate. The current one feels like... well, you know those people that do random things just so they can say "well technically..." Ya know, the one guy everybody despises? Yeah, it makes you sound like him.

I'm sure putting the potato-steak into the dirt for 1 hour contributed a lot to the experiment. Next time maybe put it under a car for an hour and see how it changes the flavour. Or make the steak watch an episode of Star Trek and see how it goes. It could be called: "I aged a steak in space!"

I am almost speechless. Maybe this is a brain disease, which people in Florida have... but no - a yuca is not a potato. Also: keeping a steak for 1 hour is not fermenting it (dryaging is probably also not fermenting - as the temperatures are far too low). Also also: no - a rotten or not rotten smell is no reliable indicator, that something is not contaminated. Especially soil has a lot of microorganism - including botulism. Guga is a public health-risk.

Man I love this channel so much- always a 👍no matter the experiments I just can't wait for the next video. I don't if I speak for all viewers but I am a big fan of Chicharrones in a bag for snacking on- here is my short story. Running low on bread crumbs to coat some shrimp to deep fry and I thought of you Guga and how you mash up various potato chips to take it's place so I smashed up spicy chicharrones mixed them into the left over bread crumbs to cover my shrimp and deep fried to a light golden brown and oh man this is fire. My family and friends went crazy for them so I hope you give this a try.

Try Sauerbraten. Traditional German dish, it's very good. They would preserve meat in a brine solution of vinegar and Salt. Then when they wanted to eat it, soak in water and add sugar. Very tender and great taste.

Taro is sticky/slimy and often used in place of other starches for thickening sauces and soups. The slime on the taro steak was covered in taro slime.

Age a steak in Chimi churi; A Steak in Taquis; A steak in Ranch Seasoning; A steak in mangos; Also - I want you to Sous Vide a Brisket in Worshteshire Salt Pepper Garlic and Liquid Smoke. You could also try dry aging in this combination as well.

Hello Guga, In a french book called "Le Rat et l'Abeille : Court traité de gastronomie préhistorique" by Raimond Dumay ("the rat and the bee, a short essay about prehistoric cooking"), there is a recept called "the steak persifleur" (the mocker steak). It's said to be very good. Take a thick steak. Find a nice pond, very lively, green with all the mosquitos, larvae and bugs, water grass and so on. Plunge the steak in in the plunge the steak in it. Wait for days until the meat gets green. Then clean the steak by by scratching. Cook it on a hot BBQ grill. As usual in France, prefers a rare to medium rare cooking. Please give it a try, and tell me. I've known this receipt for 20 years but I never tried.

Guga! I'm a huge fan all the way on the other coast in Los Angeles. Maybe you've done this before but I don't think I've seen it. I would love to see a BTS video of how you decide to do all your experiments and how many experiments you have going at once because you have so many things that go into the dry ager for weeks, so there must be so much crossover between experiments. I would love to see the curtain pulled back on all of it! And how you always figure out constant content for all three of your channels. You are definitely a meat genius!

Hey Guga I watched your video on microwaved brisket on my Facebook feed 😂. My family has a traditional method for cooking brisket and whole turkeys outdoors. We create a rebar tripod and hang the brisket or turkey from the tripod. Around the tripod we set up 4 rebars with chicken wire cylinders to put hot charcoal in. Finally heavy duty aluminum foil is wrapped around the 4 posts to form a square tent around the tripod with the hanging turkey/brisket (you can make an aluminum foil roof if you want). Light the charcoal in the chicken wire cylinders and top off with fresh charcoal as needed. The aluminum foil redirects the heat from the charcoal at the hanging meat (bonus tip: a flat rock placed underneath the hanging meat can store and radiate some of the heat). Great way to cook a whole brisket or turkey on a campout. Give it a try Guga 😜!

You should try crushed parsley stem (make sure you retain its juice) and wine. But instead of dry aging, do sous vide. This combo is something I discovered ~10 years ago and it's something unique.

Flash Sear in a Salted Caramel Crust: After the ice bath, coat the steak lightly with a mix of fine salt and sugar and sear it quickly. This creates a sweet and salty crust with a touch of crunch and caramelization.

Guga, hear me out. Take the Malanga, peel all the skin off and finely grate the white part using the smallest teeth on a cheese grater, it will become a VERY slimy paste. Take the Malanga paste add sugar and coconut milk, until it reaches the texture of runny grits (best way I have to describe it) taste it (just dip your finger and lick it, do not eat it yet) you want it to be slightly less sweet than the left over milk in the bowl after eating some frosted flakes. Once you reach that point pour about 1/3rd to a half cup on to a banana leaf (or a sheet of foil if you dont have, or dont want to buy banana leaves) Wrap it tight enough that it wont leak, but not so tight that it might split open during cooking (it will grow slightly during cooking) Lay them flat in a pot and stack to the top (you want to be able to put a lid on top) and steam for 4 hours or until firm Once firm enjoy while warm, or place in the fridge and enjoy cold (will firm up a lot more when chilled, and the flavor changes a little bit In Guam, we call this 'Tamales Suni'

Aged in Peanut Butter or Mustard: Before the sear, you could age the steak for a few days by covering it in a thick layer of peanut butter or mustard. Peanut butter brings in savory richness, and mustard gives tangy undertones. The aging period would infuse the steak with unusual flavors and textures!

I can see your trip to Bari left some inspiration! Even before the world Brasciola was said in the video, it was clear to me what the intention was :D On the same note I just had a nice 2inch horse steak seasoned, reversed seared and medium rare! When both worlds combine there's magic to be made!

Next experiment maybe some make Brasciole from Wagyu Meat (I would always fry them first in red wine, and then cook slowly in tomato sauce for at least 4 or 5 hours, but who knows with Wagyu maybe some Asian flavours would suite well). I had made Brasciole a few times from Irish angus brisket (or dissossata in italian), fatty and marbled, at the end there was a good cm of fat in the pot, but so delicious.

You should try dry aging in an avocado, it's easy enough to mold around the steak, would give it good flavor and be great with nachos as a side dish
They said TRUFFLES can Improve steaks, So we tried!
