Was introduced to this and many other Lebanese foods by a family friend. And I’ll tell you, middle eastern food, is the best food ever. This coming from a full blooded Italian, who grew up on Italian food.

This brought back so many memories. My dad's family came to the U.S. from Lebanon in the 20s. I grew up with his aunt fixing Kibbeh and all the other Lebanese dishes. Mom (English and Irish) learned to fix Kibbeh but I always had to do the tasting because she never cared for the raw meat. Pretty soon I was tasting it and then my dad appeared. I'm now 71 and both my parents are gone and it's left to me to fix the dishes for my brother and me. We just moved to Ohio so it won't be long before I make some kibbeh and our other favorites! Thanks!

I've been eating Kibbe Nayeh since I was able to swallow solid food. My family used to grind their own lamb.

I'm from New Orleans, and after Hurricane Katrina, I fled to Lafayette, Louisiana, which has an enormous Lebanese community. I was hosted by a very kind and generous Lebanese family for six weeks. That's where I first tasted this and it's one of the most delicious things I've ever eaten to this day. I haven't had it since, but I'm definitely going to try this recipe. You have a wonderful smile and positivity about you. Keep up the good work and God bless!

I grew up with this too and didn't realize it was raw meat for many years. I just remember liking the pink kibbeh every Christmas, wouldn't touch the brown (cooked) one,lol. Do you ever use lamb?

The pink! The best!! We don't use lamb much for kibbeh at home, mainly because that's not how our parents and grandparents did it! But kibbeh is indeed delicious with lamb, a different meaty flavor.

This makes me miss my childhood... My grandparents were Lebanese, they came to the US and soon adopted my father and his sister. This is exactly how my Sitto made kibbeh... blessing and all... and it was absolutely my favorite dish... We ate it with ghee poured on top and markouk which my Sitto also made... I haven't made Kibbeh Nayeh in 20 years because it's so hard to find a butcher where I am located. I'm on the hunt because I have craved this for too long... I am so glad to see this... A big thank you!

I have a KitchenAid and want to grind my own meat. Which size should I use to grind the meat or which disk should I use?

Use the medium grind plate and grind twice after cutting away all of the fat and gristle!

White bread American here (English/German immigrants). The first time I went to this Lebanese restaurant when I moved to this area I spotted it on the menu and I instantly wanted it, but ultimate sadness they only served it on Saturdays and that day was a Wednesday. So yeah, I always knew it was raw, practically wanted it because it was raw, I'm weird maybe. But I adore this dish and I always get it for my birthday, though I have to wait till the Saturday after. Except for today! It's my birthday and it's Saturday! I really want to make it at home for myself, but I'm not sure I can source the meat.

Oh I love hearing that! Get top round or eye of round to grind yourself at home. Tenderloin is too...tender. Gets mushy.

@@maureenaboodi remember mom saying to use leg of lamb but you have to skin it properly. I’d like to see how it’s done. Is there a way to see that part? I miss it so very much and the only time I can get it is when I get to go there 😢

The most delicious way to eat kibbeh. I ate it that way as a child but don't eat it that way any more. I don't think it's safe. I only bake it.

Totally understandable. The meat has to be very specially and carefully tended to for sure. But baked kibbeh is absolutely delicious too!!

I live in Michigan as well. We love Kibbeh Nayeh ❤ Can you recommend a good butcher for me? My husband wants me to try to make it myself. Im just really worried I might KILL us, lol 🤣

Tracie I'm so glad you're going to make kibbeh nayeh! We buy excellent kibbeh and hushweh meat at Apple Market in Lansing. Depending on where you're located, this might work for you!

My mother made the best Kibbeh Nayeh, (of course),but she passed in 2001,and I regret so much not taking the time to have her teach me her recipe. She always went to the same butcher shop, and had only Angelo grind her meat simply because he new what had to be done. My first girlfriend back in 1970 had Christmas dinner with us and asked what is that? So I had her taste it and then told her it was raw meat. She loved it, and so did any of my friends who ever tasted Kibbeh. I miss those days!

Hello! Yes, you can make kibbeh without the onion, knowing that the flavor will be different. Try adding more bulgur and water to the mix to get the right consistency. Then season to taste with spices and salt. You could add a touch of garlic paste if the flavor is lacking after that!

Wonderful! I also live in Michigan, close to Dearborn, and have been eating this, and many other Lebanese dishes for over 40 years. Raw Kibble is my fav. I wish youse guys were my neighbors cuz I'd be contracting meals every week. I'd just throw my money over the fence. 😊 Can you recommend a proper butcher in the Detroit/Dearborn area, please? As for the video, excellent display. I want to make this all the time.

My mother is Lebanese and I grew up eating this. I had no idea it was raw heat until I was around 12. It didn’t change a thing. It’s absolutely delicious with bread, onion, and olive oil.

I made kibbeh nayeh for the first time with the help of your video. I have a question? After plating my kibbeh and we sat and ate our meal the plate had a small amount of red juice around the remaining Kibbeh and I didn’t know if this is normal or should their be no juice at all? If not, what did I do wrong? It was very delicious

Hi there, wonderful you made kibbeh nayeh! I have not seen the juice as you've described but I'm wondering if you used enough of the fine bulgur, which soaks the juice of the meat and creates the texture of the kibbeh? In any case it sounds like there's no problem with that little bit of juice! It was delicious and that's wonderful.

Watched your video after eating some kibbeh that was gifted to us on Friday. I had no idea it was so simple to make. I imagine the hard part is just getting the meat itself prepared properly, before it gets to you. I have a question. I grew up with my mother making what she called Strip Steak. Basically it was thin little strips of beef. Marinated in soy sauce, ground allspice, ground clove, ground cinnamon. Then tossed in some flour and deep fried. I asked her where she learned to make it, and said it was some Syrian friends the family had years ago. Have you ever heard of this dish? Thanks for sharing your dish here.

I'm fascinated by the strip steak dish. The flavors absolutely sound like ours but I haven't had the meat fried like that. I'm going to do some digging to see if it appears anywhere in books/search. Thanks so much!

I've seen tons of spices in most recipes but my great aunt, Mom, and I have always used salt, pepper, and cinnamon! I haven't made Kibbeh since we moved to Ohio but now it's time and I'll set aside some Nayeh for me! Thanks for your videos...I love them!

Love Kibbeh, I grew up in Detroit and went to several Lebanese restaurants just for the Kibbeh, but 20 years ago I moved to the northern thumb area and of course no Lebanese restaurants anywhere so I had to start making my own Kibbeh. It's not as good as I remember but close enough. However, I'm glad to see you have a store so I'm going to stock up on some spices and check out some of your other recipes. And I'm with Dan, gotta have mine spicy :) Thank you for the video and best of luck to you and your family.

We use eye of round; it's firm enough to not get mushy and it's not too fatty to handle cutting away the fat and gristle.
