Hi, Denesee. I agree with you. I'm also Lebanese, and we only put a bit of cinnamon, salt and pepper in the hashwee (filling). In the actual kibbee (KIB-bee), we only use salt, pepper, and finely grated onions. By the way, I'm related to Khoury's in SC. They're a wonderful family.

My sister married into a Lebanese family and I live all their food. Technically you are talking about kibbeh nuggets. There is also raw kibbeh and a kibbeh cooked in a casserole dish with the bulgar wheat mixture on the top and bottom with the meat spices and pine nuts between the two layers then cut into diamond shapes. My favorite are the football shaped nuggets served with hummus. When you're doing all this work double or triple the recipe because these freeze very well so you can cook them anytime without the work. If you use the garlic yogurt that's great as well. It's called labneh.

try eat kibbey with green salad: lettuce, tomtoes, Cucumber dressed with crushed garlic lemon juice, olive oil salt, frsh/dried mint all to taste OR with cold yogurt salad:crushed garlic to taste, salt to taste , grated/thin sliced Cucumber, splah of vinegar(optional) dried/fresh mint mix well to a silky texture bon apetit baking kibbey balls is a healthier alternative but fried ones are tastier

I’m not Lebanese but certainly appreciate this recipe. One of my favorite restaurants in London was a small hole in the wall Lebanese restaurant that also did take out. It was right around the corner from where we lived. The flavors were memorable. Thank you for this recipe.

I also appreciate this recipe ! I’m from the Dominican Republic 🇩🇴 and we also have Lebanese influence in our cuisine. Our actual president is descendant of Lebanese immigrants. This recipe is very traditional for us as well is called Kippe and we make it mostly with the whole darker bulgur. We have adapted this as part of our culture with our own twist !!

I love these with toum or taziki.. im making these tonight with home made roasted garlic hummus, shish tawook, salad and pita bread.. were desperately trying to re create our fav lebanese restaurant from Southern California now that we moved to Missouri. I could not find pine nuts anywhere so we are using almonds. we are also using ground beef as we ate all the lamb already.. we have been getting local butchered lamb and it is the best lamb I've had in my life.. this is my first time making my own kibbeh thanks for all the great explanations ❤

Use meat mincer machine for the shell dough after that cool it in the fridge for 30 minuets it will take it to another level .and make your work easier .

It’s funny I live in Germany and lots of our friends are Libanese , Turkish or Egyptian so this recipe we would eat it a lot , but when u and other American chefs do Mexican food I have not a clue what u are talking about 🤣🤣🤣🤣🤣🥰❤️
