Ingredients:
Pork neck - 1 kg
Salt extra - 9 g
Nitrite salt - 9 g
Chili flakes - 2 g
Peppers - 15 g
Black ground pepper - 3 g
Coriander - 3g
Dry adjika - 1 tsp
You will need a thermometer to check the temperature of the meat.
Drive the temperature probe to the center of the product
Stage 1: at 50°C in the oven, reach 24°C inside the meat product
Stage 2: At 80°C in the oven, 55°C is reached inside the meat product
After that, pour boiling water into the pan. Stage 3 is coming
Stage 3: At 80°C in a convection oven, reach 69-72°C inside the meat product
