There's actually a science behind your cold pan technique. Which is also used to frying potato chips, When u cook raw potato slices in hot oil they become less crispy than putting them in cold oil and letting them fire till crisp. Also hot oil will make it brown too quick, because heat isn't being distributed as cood as cold oil warming up. Yes it takes much longer (5 minutes for hot fry, 45 minutes for cold frying) but the results are much better. It also absorbs way less oils. I didn't even think how genius it would be to apply the same technique to chicken skin! And in this case with it's own oild. Gurl you are genius cook!

This method makes perfect sense. I will most definitely be trying it. My mom is from North Carolina and she used the same roux technique for making the pan gravy and we'd put over white rice. Man that's some good eatin'! As a side note, I buy the cheap vinyl gloves for when handing raw meats and toss the out between processes such as prepping the chicken and take off one glove to season while using the still gloved hand to handle the meat. I don't mind using a few gloves to prevent cross contamination since they are incredibly cheap and then I don't have to keep washing everything throughout the process. I will update once I've made this dish. UPDATE: I just made this dish as shown in the video and it is absolutely my new fav. One additional remark about cutting the thigh along the bone is that thighs are notorious for not getting cooked well down to the bone. By exposing it on both sides, not one piece was underdone. Thank you for this recipe. It's amazing.

@@SnackAttack77 MSG has been used as a food additive for many years. During this time, the FDA has received many reports of concerning reactions that people have attributed to foods that had MSG in them. These reactions - called MSG symptom complex - include: Headache Flushing Sweating Face pressure or tightness Lack of feeling (numbness), tingling or burning in the face, neck and other areas Quick, fluttering heartbeats Chest pain Feeling sick (nausea) Weakness But researchers have found no clear proof of a link between MSG and these symptoms. Researchers admit, though, that a small number of people may have short-term reactions to MSG. Symptoms are often mild and don't need to be treated. The only way to prevent a reaction is to not eat foods that have MSG in them

I recently just had almost 20 fibroid tumors removed from my body and through this process I’ve learned more about what’s healthy for our body and what’s not. Some evidence shows MSG is linked to obesity and weight gain and can increase the risk of fibroids among other health issues. I am a Black woman and fibroids occur more often in our bodies, so if I can share any of my wisdom and experience with others so that you don’t have to experience this, I am happy to do so. Yes, monosodium glutamate (MSG) is a known neurotoxin, or excitotoxin, that can have damaging effects on the brain and nervous system. MSG is a man-made chemical derived from glutamic acid, an amino acid that's essential for brain health. However, too much glutamate can overstimulate neuron receptors, which can weaken and exhaust the neurons, potentially leading to death. Studies have shown that MSG can affect the chemical composition of the hippocampus, which can activate neurodegenerative pathways. Other studies have found that MSG can cause neuronal damage in the cerebrum, hippocampus, and cerebellum
