This looks delicious but I would worry that the ground beef would still be pink in the middle. I am going to try this with already cooked seasoned beef, and instead of parsley I'll add cilantro. I'll also add a slice of mexican cheese before folding it. I'll fry in a mixture of butter and olive oil, but not too much. The meat will already be cooked so all I need to do is saute the tortilla on both sides till brown. Thanks so much for the idea!

@@niemandschuldet Actually, I have made these in a flat format, not folded. You can see other videos where the recipe calls for seasoned ground beef spread on a tortilla- corn or flour, I use corn- and then fried, meat side down, in a skillet. The meat is thoroughly cooked. Then you just fold the whole thing and add cheese, etc. Really good!

@Ammara Khan Because its suposed the tortilla is completely cooked when is made (homemade or supermarket). Even if the tortilla is raw, the tortilla will be completely cooked if you heat them in a comal or a pan. Be careful when using cilantro if you offer them to guests, cilantro (coriander) tastes like soap to approx 20% of the population due to a genetic variation, this will undoubtedly destroy the flavour for them as I know too well, for decades no one would believe me when I kept telling them some foods tasted like soap until about a decade ago when the discovery was made.

@@Vladi0310 It may be somehow similar to chebureks, but the principle is completely different. In chebureks, the main thing is juice, so it is necessary to add water or broth to the ground meat, and the cheburek itself must be hermetically sealed. Here, instead of liquid, an egg is added, which makes the meat hard when heated, and all the meat juice flows out when frying.

You'll just be hungry sooner by using less fat, but you do you. Plenty of good info out ther that shows that those who eat less fat tend to eat more calories because they eat and snack more often. Best luck.

My Tiá/aunt/family friend taught me this when I was a kid. I'm pretty sure those are corn tortillas, they're thicker and almost more grey. If you do it with flour tortillas they'll puff and crisp into shards essentially. But regardless this is a phenomenal recipe thank you for sharing it!

The best way to mix anything in something like this is to mix your egg, dry ingredients and wet ingredients together first in a separate bowl and then into ground beef I found out over the years. Ingredients get distributed more evenly that way. I also mix it into the ground beef on a flat surface like a plate or cutting board or mat. It's soooo much easier and faster and easier on your hands and wrist and less work.

I don't think this recipe is a good idea. Meat need to be cooked more then the tortilla. If she covered the meat with the tortilla only the tortilla is cooked meat still raw inside. I will cooked the meat more then half separate then I will fold it with the tortilla and finish it like she did.
