When you start to ferment " Uncle Hoochie" do not seal the tops tight ,it can explode the bottle, plastic container. We put a large balloon on the top. It filled with gas from the fermentation and kept out the bad stuff in the air to keep it pure. You can make wine also, it just needs to ferment longer. ENJOY!
@daveepperson3469 Жыл бұрын
The large balloon on the top is wonderful idea to take up the excess CO2. If you leave it cracked open you run the risk of ruining the batch by letting in Oxygen, if you leave it shut it can burst the container. A balloon or a small airlock device over the top of the bottle will save you from stinky brew.
@havoc_64 Жыл бұрын
Exactly, most of us home brewers have air locks that we put vodka or another clean spirit in so that the must can ferment. The sedement is dead yeast hulls and solids from the ginger.
@julianbatcheler9970 Жыл бұрын

Good advice. My dad and I managed to explode about 4 gallons in the wellhouse when I was much younger. Dad's gone now. But I will never forget the day they exploded. Dad said that the intact bottles had to be drunk. I was probably 16 at the time. But it was a good time. Fortunately it was one of the few times Dad let me sleep in.

It can also come from the reflection off of snow. When I was doing fire watch onboard for the welders, I also learned that certain paints and treated metals can reflect the UV causing sunburn. Sunburning your eyes (flash burn) is the worst, it feels like sand in your eyes that won't flush out.

When you make wine or beer, it ferments until the sugar is used up. If you put in too much sugar, the yeast will stop working before all the sugar is gone, and you get sweet wine. What a lot of people don't understand is that once fermentation stops ( no more bubbles, maybe a week) then the hooch won't get more alcoholic. The longer you leave it (weeks, months, years*) the cloudiness will settle out, and the flavour will smooth out. *Beer will be mature in a monthe or few. Strong beer or good wine can take a year or more, and can possibly improve for many years.Good luck being patient that long!
@JMartindale-p3f Жыл бұрын
Kristen and Matt, I've been making beer for the last 7 or 8 years. I started with bottling the final product, but have since moved to kegging which doesn't require the "bottle conditioning", which carbonates the alcohol in the bottle. I usually shoot for the 6% or higher ABV range. To get there with beer, you have to let it ferment for about 4 weeks. Then you siphon off (I guess you could pour it really carefully) the non-sediment liquid and put it in the bottle. The sediment is the yeast by-product (waste LOL) from eating the sugar. The extra sugar (I would suggest corn sugar) you added to the bottle is for carbonation only, as the yeast has eaten through the initial fermentation sugar. Let it carbonate for about 1-2 weeks. This gives it the "mouth feel" that makes it not feel like you are drinking water. I would suggest you invest in a cheap beer setup, as the procedure is the same. That would mean a "bubbler" during fermentation to keep air out and reduce the chance of letting bad stuff in that will throw off the taste (Don't worry. Nothing bad can live in alcohol), but it will also keep from making bottle bombs when too much carbonation builds up during the process. Yeast is a magic creature! I enjoy your sailing videos much more than any of the other ones. Cheers!
@georgeoats7933 Жыл бұрын
Always fun following you both, if the yeast is working always let it vent. Keep it up! Sláinte🐬
@howtodave1725 Жыл бұрын
Yeast eats sugar and poops alcohol, it will do this until one of two things happens, 1 it runs out of sugar or, 2 the alcohol level gets so strong it kills the yeast. You need to get a bubbler for the top of the jugs so that the yest gas wont build up. A bubbler is just a one way check value that lets the gas out but no air in. You can make your own by running a hose from the top of the jar in to the bottom of another jar that has about an inch of water in the bottom to cover the hose. when the bubbles quit you know your mash is ready.
@utoobuser206 Жыл бұрын
There ya go!..i tape a smalll bottle to the side of the brew jar and put a hose in the cap and run it to the bottom of of the small bottle with water in it to make an air lock. Lets you watch the bubble rate to figure if its done or not and more sugar means more alcamahol!

regarding your jungle juice hooch, leave the lid cracked when fermenting. after a week or so (when the activity of the yeast slows down or stops), you'll want to bottle in glass with only about 2 tsp of sugar. fermentation will continue at a slower rate while refrigerated. the flocculant at the bottom is just the yeast settling out. most people don't consume the settlings, but it won't hurt you. yeast eats sugar, which produces alcohol and CO2. leave the lid cracked on your fermentation bottles or the CO2 will explode and you'll have a mess. i brew beer, and the same principles apply to jungle juice. you'll end up with maybe 2 to 3% alcohol, depending upon how much sugar you start with. if you really want to get fancy, get a cheapo specific gravity float to record your starting and ending specific gravity (one rated for beer will work fine). this will give you your alcohol percentage after fermentation.

with the hooch matt its best not to shake it or disturb the sediment , decant the liquid off to make it as clear as you can , another wee trick is to stick the entire bottle in the freezer , alcohol doesnt freeze but the water does , so what you pour off after the freeze is pure booze , just add flavor of anykind after that , coconut is nice .

Heu guys, another great video. We also have an older boat (1979) and have to use a bungie tie, for our throttle. infact the gear shift needs to lift up and forward to go in reverse, pull back for farward. I think the charm of our older boats is that you need to know your vessel to operate it. So happy to see you folks enjoying cruising after all the refit. Have fun. If we don't rub the bottomof our lead or steel keels every once in a while then are we really trying hard enough ? LOL We have nothing but rock up here in Georgian Bay, Ontario, Canada. The "sediment" is the dead yeast. The cloudy look is the yeast in the liquid. Yeast is of course fine to consume. Finer processes can filter it out. The fruity aroma is from the yeast as well. Add honey to it, and you will definitely get a kick from that.

Beer needs 1 week to ferment + you need an air lock to gas off without contamination. Do not disturb the pancake on the bottom as it will ruin the beer. It also should be kept between 70 to 75 degrees and away from light. Bottoms up 🍺 PS beer yeast stops fermenting at around 6 percent alcohol.

yeast eat sugar and pee alcohol, then it fart CO2. after the first fermentation what you have is called wort. Then when bottling and adding sugar you are activating the dormant yeast. the sediment is dead yeast and wort solid residue. is recommended that on fermentation and when doing the bottling condition you keep it is a fresh dark area. Once you gain CO2 on the second fermentation you put it in the fridge. In order to induce Gas (co2) in to the solution you need high pressured and cold solution. then you will obtain carbonization in a couple of days.

I’m sure you have had a lot of replies. But use an air lock (valve) when fermenting. If you have not got one then use a little cotton wool soaked in some vodka or rubbing alcohol… as in leave this instead of a lid… You can add sugar until it stops fermenting… this should make it stronger… but you don’t need to do this. Pour it off leaving the sediment. You can then bottle it preferably in old soda bottles… at that point you could add literally half a tea spoon of sugar which should be enough to carbonate it. There are lots more things you can do to make it better but this is the basics.
