Daemon is ensuring dragonstone is secure for rhaenyra to safely give birth, yes he’s hesitant to attend the birth because of what happened to laena but don’t be mistaken, rhaenyras safety is his upmost priority.

Dragons are indeed not slaves, as Daenerys said. Aemond didn't really lose control of Vhagar. Neither did Luke lose control of Arrax. Arrax acted on his own (he didn't disobey any commands, and the moment Luke said No, Arrax flew away). Same with Vhagar, the moment Aemond said No, Vhagar flew away. Arrax acted on its own due to Aemond and Vhagar's actions though. A small inexperienced dragon was just scared and wanted to defend his rider from constant death threats and harassment. Can't blame him for that. Same for Vhagar, she reacted aggressively to fire from a hatchling and decided to show who's the boss. The blame here is on Aemond, who previously said "I lost an eye, but gained a dragon, fair trade" and now decided to scare his nephew on the biggest war dragon in the world, because he took his eye.

True, but the book doesn't describe what happens in clouds. So the show did some clever choreography. Aemond didn't want to do more than scare Luce but Arrax panicked and attacked Vhagar with flames. Vhagar is a three centuries old beast that has seen several wars and conquered Westeros together with Aegon the Conquerer so Vhagar ain't taking none of that shit, no matter what her rider wants.

The show does a good job at deepening the characters and making them more nuanced. Viserys is a jolly simpleton on the books whereas in the show he's a part naive, part terrified, and part in denial about how he'll leave his legacy to his heirs. G RR Martin also acknowledges that he prefers the show Viserys. Now he's also clear about parts that he doesn't agree with. But that doesn't change that due to the unreliable narrator of the book, there were opportunities to fill in the gaps with more substance.
