You could’ve put the seeds inside a zip lock bag and use the roller pin (rolling motion) to crush them. Thats how i usually do my dry spices

Bit late to the party, but a zip lock bag and a heavy pan is amazing for crushing spices I discovered when I needed some crushed allspice in my smash burgers while on vacation and didn't have my trusted m&p.

Top tip: in Finland we make cinnamon rolls with this cardamom dough and then cinnamon&sugar&butter filling. So basically the same recipe but swap cardamom for cinnamon in the filling. Cinnamon and cardamom go super well together and the cinnamon cardamom rolls are basically heaven.

Yes always cardamom in the cinnamon bun dough. I don’t know if she’s happy with the texture but in my opinion she’s baking backwards. If you add a bit of flour at the time you can control the texture and the bun won’t get dry or dull. I would also recommend room temperated milk and butter. And vanilla filling (vanilla, sugar, butter)... 😋

We use cardamom a lot. Tip: if you are going to use only the inner part (black seeds) you can place them in a folded paper and crush them with the rolling pin. In my country, we use both the inner and outer parts, but we grind them very finely with a food processor. Save the outer parts to flavor tea or custards.

Cardamom tastes like a mix of eucalyptus and lavender, it's got a bit of a medicinal flavour, it's not for everybody. I made these cardamom buns today and they're not exactly crowd-pleasers, some of us enjoyed them, others really didn't. Cinnamon buns are better imho, and cinnamon is cheap

I'm swedish, and I agree "kardemummabullar" (cardamom buns) are really good, had one yesterday😍Over here we love our "fika", and cinnamon-, cardamom-, and vanilla buns are many people's favorites. We even have an official cinnamon bun day when we eat lots of them. Love from Sweden💛💙

I can 100% understand this energy. I went to Edinburgh and there was a Scandinavian Cafe across from us and we lost our minds when we ate them. I asked for the cinnamon and the awesome worker was like, “ what you want is the cardamom.” I don’t travel often, but I know advice like that is golden. Like those buns. They are every bit as delicious as she makes it sound. It isn’t hyperbole.

These are such a standard thing to eat with coffee and serve for guests as well here in Finland so I think I don’t have enough appreciation for these! But they always bring me to my childhood when my mum baked cardamom buns while she had a day off from work and I could eat them after school❤️

When I was studying for my masters, we had a Swedish bakery nearby and you can just smell the goodness as soon as wake in. The cardamom buns were technically my breakfast, my afternoon snack (fika) and my go-to when I’m in a hurry. I can feel your sister when she said “I could literally cry”, I want to cry too!

Also, a tip: after they’re finished proving, cover them with a few strokes of raw egg and it will make them glossy and golden in the oven. Also sprinkle the topping on them right after the egg before the oven so it caramelises in the oven and sticks better. But great first try!

just made them-- SO GOOD. helpful tip: make sure you prep your baking sheets with parchment paper or a cooking spray that can bake in HIGH heat (like avocado oil). Learned the hard way and had one batch burn on the bottom :/

I am a Swede and I always brush them with lightly beaten eggs before putting them in the oven and you can try replacing the cardamom with vanilla, that's great too! 😋

Hey Kristin, idk if you will see this since there are like 400 comments but I finally got around to making these and they turned out amazing! Easy hack on grinding up the cardamon seeds: I just put them in my Vitamix for a couple second and it worked great! Just don't do it too long or it will turn into complete powder. Saved having to buy extra kitchen tools to grind them and saved my hand the hard work of grinding them myself :)

U can find a morsel and pestle at your local Mexican market, if you want to ask for one it’s called “molcajete” in spanish and once you ask for it, you’ll probably find that there are large ones, but I’m sure they also sell smaller ones, btw these look delish!! 🤤🤤

I just wanted to say you’re right about the sugar with the yeast! 😂 I work in winemaking and that’s basically how you make wine! The sugar in the grape juice acts as “food” to the yeast we add (and turns it into alcohol) 😊
