Im a meat eater, Ill admit it. But my spouse is vegetarian and we keep a vegetarian and sometimes vegan household. And I LIKE seeing pricey vegan dishes because when I see a lot of vegan or vegetarian dishes I see "HEALTHY!!!! CHEAP!!!!!!!! QUINOA!!!!" and like, theres a time and a place for that, but sometimes i want something FANCY and TASTY and that does not always equate those things. Planning on making a portobello version of this some time, it looks so good. Imagine with some crusty bread??? Omg.....

How about half time dehydrating the lions mane before getting the moisture out? I think I may try that.... Or marinade in a broth and then dehydrate. I did that with King oyster mushrooms for jerky and that turned out AMAZING!

That sounds great! Part of the reason for pressing the lion's mane is also to get a crispy skin and to shape the mushroom so it looks more like chicken, so as long as you do both (dehydrating and pressing the mushroom), it should still work :)

From my experience with Lion's Mane, one big one shrinks when cooked to a size smaller than most chicken breasts (you can see that in this video), so it's kinda crazy to me to claim that just one was equal to two whole chicken breasts when cooked. Idk, maybe your perception for how big chicken breasts are might be off? This comment is not about advocating meat buying, I'm just saying that the claim that one $5 mushroom is the same price as the meat it replaces ("or less") seems off.

No, definitely do NOT give this to your dog. Not even a small amount. Onions and garlic are extremely toxic to dogs. Since they're in powder form, they're more concentrated so it takes even less to cause serious harm to a dog. The same goes for cats.
