Hello, certified baker here! If you feel like your homemade baked goods always taste yeasty, it means that the dough hasn‘t had enaugh developing time! A big chunk of making tasty baked goods goes into waiting for the dough to develop and do it’s thing! I know it takes preperation and patience, but the outcome will be worth it! And you won‘t have stomach or bloating issues after as well.

How long would you recommend for development time? Like 2hrs or...? :)
@lanakokoulin44
@lanakokoulin44 Жыл бұрын
@@MikeyChan04 It depends on what you would like to bake. For a nice loaf of wheat bread or a baguette I recommend at least 18 to 24 hours. If you would like to bake something rather sweet and pastry like I recommend to just follow the given recipe since the waiting time varies quite a lot!

Don't throw out the rice stuck to the bottom; cook it a couple minutes longer on low heat, scrape it out, set it aside (you'll eat it later) and then add water into the pot and boil it for a few mins. You've just made sungnyung, Korean scorched tea. Add a kimchi side dish and you have yourself lunch - cooked rice, scorched rice (nurungji) and a refreshing tea (sungnyung).

With the dough it helps to make sure it's tight when you make the logs. Lots of folding and pinching so it feels taunt when you've had it fully rolled. Make a ball first and then do the logs. Fold, roll, fold in the sides, roll. Check tightness. You want it taunt but not stretched to breaking and making holes.

Quick tip for your bread ..use 2tbs of the yeast instead of the whole packet. This will cut out the “overly yeast” taste 🥰 (I use a little less b/c I’m not fond of the yeast flavor either😝) 1/2 cup unsalted butter,(room temp) 1/4 cup honey 1/4 cup powdered sugar 1tsp cinnamon a pinch of salt…whip with mixer for 3-5 min ..BEST cinnamon butter you will ever eat (similar to Texas Roadhouse Restaurant in the US)

Professional Baker here: I would make your dough the day before when making bread, it allows the dough to ferment and develop a better flavor. Put it in the fridge immediately after mixing and the next day you can continue the process. This will also allow the gluten to develop. You can do what's called "pulling a window" with a small piece of dough, stretch it carefully and if it can get very thin and allow light to pass through without tearing, the gluten is good to go. It's very important when making a shaped loaf that the outside is "tight" or it won't rise properly when baked. This is why most recipes tell you to shape a ball before letting it rest for a final shape, it's pulling the outside. It's hard to explain the balling technique, it's not like rolling cookie dough, you want the bottom of your ball to stay on the table. Holding the dough with a "claw" hand and applying some pressure with your palm as you move in circles should do this. I'm sure there are videos that explain this better. When you shape a loaf I recommend folding it in thirds one way, then in thirds the other way. Gently push the seam side back and forth along your table to seal the seam and tighten the outside. Then allow for the final proof before baking :)

Man I loved Maid-sama, I hope it gets the Fruits Basket treatment and gets redone and we get the full story. Why did so many older shojo animes just get dropped and not properly end T-T

Firstly, good job to Naomi with the dough! Secondly, as a fellow European (Hungarian) living in North America, I appreciate that you (Naomi) know how to cook because you would be surprised when I see others give these tutorials or demos they are showing the basics like how to measure out the right amount of honey, or how to start a base for soup. Anyways, I enjoy your segments on cooking because I like you making Asian inspired dishes in Europe but I really like hearing about what foods you grew up with in Germany. So, I would be so happy to see you make your mom's potato soup or other German dishes. I also like seeing what mean substitutes you use to make like German or other dishes. :)
