Looks delish! Very surprised at an additional 25 minutes cooking the pork after it already had been cooking for 8 minutes to sear. Will definitely try a variation of this.

I often cook pork chop, and IMO, the best is to charcoal grill it. Pan fried is a bit dry.

It's all a matter of taste. I am against sauces that cover up the natural flavor. It can only be a matter of refining the whole thing. It's much smarter, the original taste to reach culinary heights. Because that is, among other things, Mediterranean cuisine. Protect me from all these sauces. In moderation it can be.
