So some tips are: -Go over Chris’s comments. He picked up that Julien’s recipe is skewed. I think you used too much “yeast-y” -Sugar feeds yeast. -Salt stops yeast from working, so keep it away from the yeast. -Yeast should go in a “well” or divot in your flour mixture. This is so it doesn’t get wet too early, by the stuff under the flour. -Use the Quick Bread cycle on your machine so you won’t get the burnt crust. -Use foil around the bread pan you do in the oven, to keep the dough from pouring out. Good luck! Can’t wait to see what you do next. 🥰

Definitely a thing! Grew up with it and still have it from time to time. Those finding the spread of it, where have you found it and what brand is it? Land O’Lakes used to have one and I can’t find it anywhere now.

I've been GF for 7 years, and the best bread I've made, hands down, has been from the America's Test Kitchen "How Can it Be Gluten-Free" books. Some of the tricks they use is rapid yeast and to create a foil collar around the top of the bread pan to allow for the bread to rise above the edge of the pan without spilling over.

When I was a kid I ate cinnamon and sugar on toast all the time. The perfect piece would be super hot right out of the toaster, put the butter on so that it melts and the cinnamon sugar becomes a part of the butter ... crunchy, delicious butter. I also commonly ate applesauce toast made the same way :) You should make some for Chris and let him try it!

Chris: "can you overmix gluten free bread?" Me: no. And with GF cakes, I especially like to beat it until all the lumps are gone. Psyllum husk, xantham gum, arrowroot all make the dough thicker and holds moisture in as well as bubbles. Check your GF mix has one of these, this might be one reason why your bread was quite so liquid and his wasn't.

I've been gluten free for almost 3 years and I have found a few things in my efforts in making GF bread. 1. DON'T over-rise your bread - because gluten free bread doesn't have the gluten structures to keep the bread risen, it will fall in the oven and give you a dense bread. 2. I use a "2 to 1 to 1/2 to 1/2" flour ratio - 2 parts brown rice flour, 1 part white rice flour, and 1/2 parts potato starch & tapioca starch. **for example: to replace 2 cups of regular flour I use 1 c. brown rice, 1/2 c. white rice, and 1/4 c. of both tapioca and potato.** This has created the best texture of a bread I have made (it is banana bread & pancakes, so no yeast but still a great way to start). PS - I have the best banana bread recipe that converts to GF super well but it's a family recipe so idk if I can share it, but I can ask if you'd like!

Chris, Cinnamon Sugar Toast is a thing!! I haven't had it in years but it's delicious! I like to slightly toast my bread, slather in butter and cover in a cin/sug mixture!! Enjoy with coffee!!

My grandma would've loved this. She had celiac for 15 years before it was even "discovered" and she passed away before the gluten-free trend really took off. I remember as a child going with her to this sketchy AF health food store in an industrial park because it was one of the only places in our city that sold gluten-free groceries.

I like how I managed to wait forever and ended up actually watching it at midnight. Also if that'd been me wandering downstairs with that bread maker basket I'd have found someway to drop it or fall with it....I would trip on air

My currently favorite bread-recepie: 3 mugs of flour (what ever type you like or mix it up BUT only rye flour should be a maximum of 15-20%) 1 teaspoon of dried active yeast 2 teaspoons of salt 1,5 mugs of warm water Dutch oven or cast iron pot or roaster with heatproof lid - mix the dry ingredients in a big bowl (ad seeds or spices if you like) - ad the water and stir until it forms a more even, but still wet and sticky dough (no kneading required) - cover and let it rise for 3 hours - after 2,5 hours preheat your pot of choice in the oven at 250°C/ 446°F for 30 minutes - take the hot pot out of the oven, dump the dough in and bake the bread for 30 - 45 minutes with the lid on - test the bread after about 30 minutes with a wooden skewer (prick the bread at least to the middle and see if hopefully no dough sticks to the skewer) - if the crust is still too light, bake without a lid for the last 10 minutes ( I don't need it ... my bread gets a pretty good crust with the lid on. And it stays more moist!) - DONE! ... pretty easy and delicious bread

@@Warbler36 Yes, only one rise. Then just loosen the dough from the rim of the bowl and pour or scrape into the hot pot and off into the oven. I use a sturdy spatula to prepare the dough and also to help with the dough transfer.

So I’ve been making Julien’s bread for a couple of times and I found that if you use store bought gluten free flour mix, the dough is perfect but if you mix the flours from the recipe it’s runny

In true Julien style, he added things to the recipe (like tapioca starch expandex and nutritional yeast and something else I can't remember), maybe that's why he said his was so good!

I know with gluten bread you can add a pan of water underneath the tin you bake the bread on to get a better crust. The steam causes a longer cooking of the crust or something along those lines.

Cinnamon toast is that one thing that I crave when I’m sad or don’t feel good. I got strain looks when we moved from MA to Fl and I suggested it. My girlfriend who is from Brooklyn thinks is weird. It’s soooo good!

Rachel, I’ve been diagnosed celiac for over 10 years now and we can never get homemade bread to be the same as store bought sandwich bread. It tastes wonderful but you can’t slice it thin enough. If you find a recipe, please share it!

Bread is my favorite food. I made myself a sourdough starter about 8 months ago (he’s named Clint Yeastwood), and we enjoy fresh sourdough bread about 3x a week and it’s wonderful.

I've been on a baking binge since Thursday. Thursday I made a pumpkin pie, Friday my nephews help me make banana bread with chocolate chips. Today I was supposed to make sweet potato bread but my sister-in-law had the kitchen so I'm going to make it tomorrow. Then on Tuesday I'm going to make rosemary bread. Wednesday I'm making orange cranberry scones. I'm very excited 😁

I know that Rach mentioned the cinnamon sugar read before and I am here to tell you I am a 30 year old Californian and growing up i would butter a piece of bread sprinkle cinnamon sugar on bread and put it in the convection oven that set on our countertop.

King Arthur flour and cup 4cup flower are the best. Also zantum gum is great for bread. William sonomas gluten free bread mixes are really good too. Also we put crisco or butter and sugar around the pan for the crust

Tip for crusty bread : I've seen in a lot of sourdough recipes that they're baked in a dutch oven for the first part of the cooking process so that steam is formed around the loaf, and somehow this helps to make the crust crustier ? One example on KZbin is Mike from Pro Home Cooks (e.g. kzbin.info/www/bejne/r5iYn3-Hi8xnjLs) if you're curious about that. When you have a yeast bread you not only need to proof, but didnt the recipe call for kneading?

I am not sure about gluten-free needing to based on the reasoning for kneading is to have gluten form. But I have never baked gluten-free bread myself, so I am not 100% sure on that.

Jillie Bee ... I went and watched Julien’s video and he used a dough hook to mix the ingredients. This really got it sticky in a hurry. So you can hand mix instead (I do it sometimes when I’m making sourdough bread) but it takes longer. Oh and no kneading in the video. 👍🏻

Kneading is only for bread with gluten in it . Or at least I have never seen a gluten free recipe that calls for it , and i have looked at a lot of them 🤣

Chris about Julien’s recipe: I don’t know what else was changed really. It was hard to follow his video kind of. Me: hah hah ehh yeahhh it’s an Aries thing to his cooking. Things can escalate super easily. Lol eh bep bep bep bep Also: the dough ends up a mess. Hah hah yes Aries kitchen can’t be escaped.

I'm not very tech savvy.. so I don't know how they interface..... but I'll watch this/KZbin on my Roku TV then come back to my phone to like her videos. I haven't figured out yet if I can directly like her videos from my TV. Maybe that effects the numbers?

I'm in Colorado an I grew up with cinnamon sugar toast. Sometimes after coming out of the toaster with butter. Sometimes butter and cinnamon sugar were added to the bread and then pit under the broiler so it carmelized. I've also seen tweets lately about it (albeit on tortillas), but yes Chris, it is definitely a "thing." 😃

My mum and I used to mix cinnamon and sugar with butter, and use it to spread on our toast! Apparently it is good for helping you fight off a cold!

Oat flour and if the bread is too sweet with the banana substitute with unsweetened apple sauce. It just adds moisture to the bread for that spongey texture. Also, cauliflower cheese bread is amazing

Hi! I have celiac :) just a tip... I like to use King Arthur GF Flour it is the most compatible to regular four. Also GF baking is normal more wet so I try to add in the liquid a little at a time until you reach the right texture. Happy Baking!

Great video ☺️ simple recipe for GF breed. 950g of all purpose GF flour (schar flour), 930 ml of warm water (but first 500 ml warm water with yeast then add another part of water), salt and sugar, mix it. Add yeast and the remaining water, add oil (2 table spoon or more). Mix it and leave it for around an hour to rise, then bake it for one hour at 190 degress celsius. Hope you try it, and if you have more questions just ask ☺️

Just reminded to say YES cinnamon butter toast is definitely a thing! I used to love it as a child!!! Also one of the best things is to get a can of pillsbury crescent rolls lay them flat on a pan like little pizza slices spread butter and sprinkle cinnamon and sugar bake 10 min and its DELICIOUS! YOU SHOULD Try it if you like the toast!!! Love your videos!!!

For a crispy crust, you'd want ~400 Fahrenheit or so. A lower temp around 370 will get you a crust closer to sandwich bread from the store. I'd suggest checking out peasant bread, too - they're typically, like, 5 or less ingredients and are super easy to add other flavours to.
