All that flour on the pastry cloth and on the rolling pin is causing the dough to dry out as you roll it. Add more moisture to the dough or get rid of all that flour on the pastry cloth you’re using too much.

My grandma used to make lefse like that😍 although she bought packs of pre-made lefse, she didn't make them from scratch😅 she also made some with I thiiink cream cheese and salmon🤔 but I never ate those because I didn't like smoked salmon as a kid and now i would try it, but she doesnt make it anymore😂 she was always super generous with the butter and sugar tho, especially with the ones she gave me😂😂😂❤

My family makes lefse every year. SOME TIPS: Julien your dough needs to be wayyyy stickier when you start. Before you roll it out your little ball kneed in a bit of flour then you use all that flour on the cloth and rolling pin to help make it less sticky. (You want it just dry enough to not stick to everything, sometimes it will though) When using the stick, place it on the edge and roll the dough onto it. We make lefse almost see though so it's very fragile but rolling it 👌 But yours came out beautiful and I'm glad you enjoyed making it! Most people find the idea of it weird.

As a long time fan of J&J, it makes me so happy to see Julien attempting to make it. not-so-pro tips: my grandpa always turns the lefse stick to double the layer when you pick it up (like a rolling motion), roll the sticky dough very thin to create brown bubbles on the surface (and after cut like a triangle, not circle, for optimum rollage), and using a metal lefse “electric grill” could be easier. Keep doin’ it to ‘em chef 😎 I would love to see a classic midwestern hotdish/casserolê or snickerdoodles

Also for future reference: for transferring the lefse to the skillet, once rolled out, wrap it on the stick, then once on the skillet unravel it to prevent it a little from breaking apart in the moving process.

Would you call it a pancake like Lefse of more of a flatbread Lefse? I'd really like to know. And do you eat them for breakfast or more as a candy/snack?

@@sigridvanosch1990 I think I would call it a kind of flatbread, not a pancake. And in my family, the tradition Is to eat it for breakfast and lunch, and not really a candy/snack, because we also put meat with mustard in it, called "Sylte". But we also eat it with butter and sugar and jam like Julien showed in the video. But I can only answer for me and my family's traditions.

Lefse is wonderful. Every year around my birthday, my entire extended family gets together and makes enough lefse to last all 20+ of us all year. We start at sunup and go to sundown, and we enjoy every moment of it. My family typically eats it with butter or meats and cheeses, but I love mine with peanut butter. So excited to see you making something that means so much to me.

*annoyed Norwegian grunting* Flatbread is a different thing called "flatbrød" which is extremely thin and hard. Lefse are kinda already supposed to be gluten free and if you need more starch, use potato flour instead of tapioca. And also (one last thing) that was way too dry... they're supposed to be more wet so you can roll them out to be thinner 😅 Hope you see this comment and use the tips next time you attempt to make lefse 😊

Omg I love this so much, I am Norwegian and I eat lefse all the time. You did so good! My mom makes it the Norden Norwegian way, which is even better. btw there are sooo many different types of lefse in Norway dedicated to where it's from. The one you made more often called "lompe" and you eat it rolled around a hot dog or salmon and cream cheese.
