Hi Merle! Next time - I doubt there will ever be a next time but, if by any chance there will be - peel the mushrooms, they easily peel if you grab the little frilly thingy around the stem. I'm sure you've done it before. That's why they became slimy, that is the "slimifying" element of the mushroom if you will. If you marinate them without it they will be much less slimy. I pickle mushrooms and peeling them definitely helped with that.

British vegan who spends a lot of time eating around London here! In terms of fast food, nearly all chains have at least one vegan option in each category (and the McDonalds fries in the UK don't have beef flavouring so they're vegan friendly!) - but if you're looking for something a little more local, there's a British fast-food chain called LEON that emphasises healthier options, and about a third of their menu is plant-based. There's also 'Pret Veggie', a spin-off of a cafe chain called Pret a Manger that only serves vegetarian and vegan (the food is always really nice, but tbh, I find Pret coffee isn't the nicest!). In terms of vegan chocolate in the UK, I'd recommend the Vegan KitKats, Hip Oat Chocolate, the vegan Gnaw bars, and (for something a little fancier) Booja Booja (who also make vegan ice cream); those are all just things you can buy in supermarkets, but Hotel Chocolat is a chocolate shop chain that also has some really wonderful vegan chocolate options made with nut milks. In terms of other snack foods and the like, there's not too much of note - but as general groceries go, if you can, I'd recommend getting your hands on some Henderson's Relish, which is a vegan alternative to Worcestershire sauce and an absolute dead ringer imo. There's also Applewood, a smoked Cheddar made in Somerset, which has a vegan version that is my go-to melting cheese at this point. Finally, there's a brand of vegan meats called THIS! as well as a British-made tofu company called Tofoo that are both very popular and easy to find in any decent-sized supermarket here; they honestly prop up my diet more than I'd like to admit, so if they're of interest I'd recommend trying them too! In terms of other food joints around London - sisterwoman is a vegan soul food location at Moko in Tottenham which is great; there's Purezza in Camden which is the UK's biggest vegan pizzeria; I can second the Mildred's recommendations; Andu Cafe in Dalston which is a by-now almost legendary Ethiopian food spot; and if you're feeling like you might want to splash out, Apricity in Mayfair is a wonderful place with both a tasting and an a la carte menu which has plant-based options for all of the courses (It won a Michelin Green Star last year!). And as everyone is saying, the Greggs Vegan Sausage Roll (and also the Vegan Steak Slice) are iconic here, and a vegan fish and chips done well is a mighty thing to behold (though I don't have any specific recs there). Enjoy your time in London (and thank you for being a big influence for why I took the plunge into veganism in the first place)! :)

@Unmasking_Viandalisme honestly each is entitled to their own, its completely your choice if you prefer to cook every meal from scratch and be a healthy vegan, but many people don't become vegan for health reasons and still want to enjoy flavours of fast food, because we deserve it too. Additionally greggs is super affordable and is a really good meal for people working for long hours and don't have time to cook everything all the time . I'm not advocating on eating greggs everyday but it's definitely a UK classic and highlights some classic British dishes.

As a kid, I could have lived off of deviled eggs, especially sprinkled with sweet paprika (which my dad hated). They were one mash away from egg salad sandwiches, which were my second fave, after fried, over-easy, egg and cheese sandwiches (tho mom used the shitey white bread that sticks to the roof of one's mouth). You put a lot of extra things into the filling that I have never heard of anyone using (including garlic: yuck!). Down south, some people do add pickle relish to the yolk mix, but up north, usually not. I prefer not, especially as down south, instead of dill relish, they tend to use sweet, which is just nasty. I wonder if a pared-down version of this would work? I might even consider scooping the 'shrooms, to make their outer layer thinner, more egg-like (obviously using the scrapings/"stems" for some other recipe). They might be even better if, after brineing them, you zapped them in the microwave for about a minute, or dropped them into boiling water for a minute, to make them firmer. Not long enough to really cook them, tho. That part will be tricky. The basic recipe is just salt, pepper, mayo, and mustard. I can hang with some dill, tho. Here may be a simple challenge: One of my favourite appetisers, at a formerly allegedly Scottish pub in Nashville (Dan MacGuinness), was their stuffed 'shrooms, done with seasoned cream cheese, topped with a white cheese that melted (maybe Munster?) and browned well. The plate of four giant caps could have been a meal for one. The new owners cut that, and the Guinness Cheddar cheese soup in a sourdough breadbowl, from their menu. Those were why I was going there, that, and they had bangers and mashed for my husband. They eliminated the boiled cabbage that went with that as well, the dumbasses. Now that there's decent cream cheese alternatives, and possibly Vegan cheezes that may melt, I MIGHT be able to re-create this at home. But the cheezes tend to suck, not melt, not brown.... Maybe some combo of the Myoko's pourable moz and something else? Maybe you can do stuffed 'shrooms for us? Different combos of different cheezes? I miss seeing my late sister, and us going somewhere she had found. I miss going out with my late husband. Our adventures were finding new places with food for us both. Now, I sit at home, in my kitchen, wishing. Every day. Widowerhood sucks. But at least people like me get to see people like you doing good things, sharing them. I love that you enjoy what you do, providing a small amount of love, from your kitchen, to ours. Thanks, Merle.

I went to London briefly in May. Get some vegan sticky toffee pudding for me! It was what I wanted the most since when I visited the UK many years before it was my favorite dish. I was unfortunately unable to obtain it at the time. There are a few places that do it. A vegan pub called The Spread Eagle is supposed to have it. I think other restaurants may have it seasonally. I went to a really nice vegan restaurant called Mallow and they said they typically serve it in the winter time. If you know who Ed Winters is, he has a restaurant called Unity Diner that donates profits directly to his animal sanctuary. I didn't get to go unfortunately since I did not have time. But I actually think it could be cool if you tried the egg options over here, things like Ogg and cracked!. Hope you enjoy your time here in the UK. But if you're going for the fast food places only, I would suggest the veggie dippers from Mcdonalds (dont know if vegan but vegetarian friend likes them), and to try the vegan wopper over here, want to see how it stacks up against the US since we dont have impossible or things like that.

I feel like silken tofu would be a better egg white. Though for a party, I suppose you could spoon some silken tofu into egg cups meant for soft boiled eggs, top it with the yolk blend (I would do mungbeans which is what justegg is made from, but chickpeas are more accessible) and sprinkle with a little paprika & black pepper. You COULD put little spoons out... or, keep them as close as you can to being a finger food and let people toss them back. Vegan Deviled Egg Shooters. If you need to make an actual party-sized batch, you could probably use disposable paper mini soufflé cups.

Yeah, I really like mushrooms but mostly cooked and this just seems weird. You can do the same type of thing using boiled baby potatoes cut in half and filled with that "eggy" stuffing, which is quite tasty, but it is so hard to duplicate the taste and texture of boiled eggs that I don't look at this as some kind of substitute, just another nice vegan recipe. The chickpea filling (my seasonings are a little different) is great for a sandwich or wrap, as you say. And if you add seaweed flakes/flavoring of some kind instead of black salt, could be a "tunaish" filling.

You have to go tonTemple of Seitan. They have great food. I would have said Ms Cake and Yorica, but covid claimed their business. Yoruca may have a small range in Waitrose. I haven't tried many if the more adult restaurants as my children are such picky eaters and we rarely travel to London without them.

Did you rinse and sqeeze out the mishrooms before adding it to the pickle brine? It is better that way.
