Looks nice, thanks for sharing. Only a few years ago choc orange weight changed so could that be why the white chocolate didn't work? Each segment now has a hollow bit rather than flat and you no longer get the thick core bit. Anyway what I'm trying to say is if the recipe says add one white choc orange they contain less than the used to.

I'm an adult with kids of my own. We have Christmas on our own or with inlaws many years, and my parents STILL get us chocolate oranges for our Christmas stockings every single year. I'm not complaining. I look forward to it!

I remember seeing a video from 'How to Cook That' where there was a recipe that asked almost 1:1 ratios of caramilk chocolate to cream and it was too runny, so depending on the proportions that could've affected the white chocolate ganache. Also some people have suggested whisking it? I think I saw that on the video too and it just split (we need a Barry Lewis-Anne Reardon collaboration lol)

Barry for a white chocolate ganache you need 3 parts chocolate to 1 part cream chop chocolate into small pieces, the smaller the better heat cream and add to chocolate leave for a couple of minutes before mixing together chill in the fridge until it has thickened remove and mix with an electric whisk to a white consistency job done adding the butter altered the ratio and made it more of a runny glace hope this helps for the future recipes

I'd make a guess at the modern white "chocolate" being made of more alternative ingredients than the cocoa butter it's usually made out of, given that most chocolate these days skimps on the actual cocoa content because of its higher cost (environmental stuff, supply vs. demand, etc.), so results in older recipes not working out cos it's just not the same any more...

This looks incredible! I'm in the US and we would always get a real orange for Christmas-- except I don't like the texture! So to keep with the spirit of the tradition my lovely Mom got me a Terry's chocolate orange one year. Now everyone loves them and we get one each year still in our stockings.

Yeah, you're meant to whisk it like it's normal cream, I've done whipped white chocolate ganache before and it definitely will not thicken up on its own straight out of the freezer

Back in December the same year you posted this I did a terrys chocolate Orange cupcake except I did for the icing white chocolate to resemble snow and added some Terrys chocolate snowballs to make em more wintry themed which I found in the cookbook I also got.

We live in Wisconsin USA and my kids get a chocolate orange in their stockings every Christmas. They love them. One year my daughter said she would like to try the raspberry one , nope. lol She did not like it , back to the orange . Merry Christmas !

I'm the only one in my family that loves the chocolate orange, and then I found chocolate covered orange jelly sticks. I could eat a whole box by myself and then the major name brand store decided to stop carrying them. I could buy them online for twice the price, but I have been contemplating making my own from scratch. Oh, instead of plain chocolate, I could use a chocolate orange on orange jelly. Oh lord, I think I have an awesome idea.

I know why the cream is runny instead of thick. You messed up the butter by overheating it. You bring these things to a boil, then add the butter and don't let it get anywhere near hot again so it can thicken up. In this case I think the mixture was simply too hot when the butter was added so the butter didn't have the strength to cool it down fast enough on its own.

Hi Barry and Mrs Barry. Today it's a balmy -1 in Calgary Alberta here in Canada. Calgary is in what is known as the Chinook Belt. What that means is that the temperature can range froom -40 to + 20 or higher. It can, and has gone from -30 to +20 in a matter of a few hours. It will be -28 on Thursday and warm up to -7 for Christmas day. You basically need everything from a parka to a bathing suit with you when you leave the house. (We do not live in igloos lol).

We love the dark chocolate orange. Have you tried the crunchy version? Think they put rice crispies in it. That recipe book makes sense as it makes you buy more chocolate oranges to make them. Good business sense. I’m from Ontario Canada too but it’s plus 2C here today. We are awaiting a huge snow storm so I am watching you. All the best to you and the family. Enjoy your cake.

If you add the butter after you've completely mixed in the hot cream and all the chocolate is melted you can add your butter and use your muscles to whip it in. It should be even more thicker if you place it in the fridge for about 10-15 min.

I have a complete hatred for chocolate and orange together but might try using something else like matchmakers or just plain dairy milk and then add a little espresso powder. I would still do the white ganache.

Maybe you should have whisked the cold white chocolate ganache to make it more firm, like when you whisk liquid cream and it changes consistency when it becomes whipped. I hope it helps!

I struggle with hyperthyroidism (after cancer) so I barely wear any clothes because I’m always 38-39 Celsius. The only problem is that snow is extremely hard to walk in because of muscle weakness. Other than that, winter is good 🥰

Ok, Barry, real talk here.... forget about the Linzer stuff... Just roll out thick cookie dough, cut out shapes with a hole in the middle (hearts, stars, whatever) and then put a piece of hard candy in the hole. Ideally the baked dough will end up taller than the melted sugar candy. Then you prepare a sugar glue (powdered sugar+water) and stick together two halves of your cookies but not before the final Twist: put some sprinkles in the center! You end up with a cookie consisting of two sides with a hard candy "window" on each side and a space in the middle which is filled with some sprinkles or pearls or whatever you want

i really want to help you with the ganache! i learnt to make chocolate a t uni - I know you know how to temper chocolate, and especially with white chocolate in a ganache it has a much lower tmeperature when it’s ready to use. Ideally, you wan to add the hot cream, let is sit for a minute then whisk very gently starting from the middle working outwards with a spatual till incorporated. Then when the cream/chocolate is around 28 degrees can you then add the butter and mix it in. You don’t want to add the butter then more cream. Also I noticed at the end it looked a bit split so was probabl heated too high, white chocolate is has a working temperature of 28-29 degrees celsius so best to use it like that. I think it might be in the method but if not maybe the ratio of crea to chocolate to butter. Hope this helps! I LOVE Terry’s chocolate orange!! Cake looked delicious :)

Im not in Antartica but in North Dakota 😅 it’s day 4 of the most insane winter storm I’ve experienced as an adult we have over 17inches(43cm) of snow and it’s still snowing more 😂 the whole state has basically been shut down for 4days and the roads have been closed off and on its wild and a bit scary 😬

My guess is that the white chocolate ratios in the minis are different (like m&m minis have a different ratio). Given what another person commented and that it looks speckled at the end, perhaps you heated the butter too much and it split?
