Mozzarella, halloumi and cream cheese made from scratch using a vegan cheese making kit! With a couple of additions - mainly nuts and a bit of patience, I was able to make vegan alternatives and then compare them to the real thing. This was a really fun experiment to try and despite not being vegan or vegetarian, from a texture perspective at least, it really tasted quite good indeed!

This kit wasn't perfectly brielliant in my opinion, but I wouldn't cheddar tear if I was vegan and had it as an alternative to the normal equivalents! Definitely a really fun project to try out!

I bought a vegan cheese kit for my friends birthday (she's obsessed with cheese) and apparently it turned out much nicer than the shop bought vegan cheese, which is basically inedible

The one or two slices of store bought vegan cheese i've tried was nicer to me than the real thing, but i'm rubbish with things like cheddar cheese when it is cold. This was a lot of fun and definitely had more flavour / was fresher, all be it, not a super accurate taste, but the texture was good!

My wife tries to stay dairy free as much as possible and we have found we really like the Violife Feta as a replacement for Feta (obviously). Now, nothing will ever fully replace real feta but it really does have a very similar taste and texture and is delicious in its own right!

This kit had a recipe for Feta, might give it a go. Think a lot of it was down to the marinade though

You gotta love Barry for at least giving vegan cheese a fair, unbiased chance. I always wondered how they made vegan cheese. Interesting to see it's made from nuts. But calling it cheese is a stretch comparable to the earths equator.

Vegan alternatives should really have their own unique names on top of just being "vegan _____" Honestly I'd be a lot more eager to try new unique foods that weren't just trying and failing to emulate very specific types of non-vegan foods.

@@GamePlague same! Trying to eat more plant based and I hated every "tofu chicken nugget" recipe I tried... Then I found Mapo Tofu, a traditional Chinese tofu dish and now I'm obsessed with the stuff!

The important thing to remember is that nut cheeses are only one kind of vegan cheese. Moreover, none of these are fermented compared to something like Miyoko's. There's an entire world of it out there and I super recommend looking at more.

I’m amazed. I’ve seen loads of vegan youtubers make their own cheese but they all use about 50 ingredients and it takes about 100 steps and 5 days to make 😂😂😂 This looks so simple 😂

I think the main thing to remember is vegan "cheese" is never going to taste exactly like dairy cheese. They aren't trying to replace the flavour, but the function. If you can pan fry it and it tastes ok, then it's a halloumi replacement. If you can spread it on a bagel and it tastes ok, then it's a cream cheese replacement. Just because it doesn't taste exactly like what it's trying to emulate, it doesn't make it bad.

Absolutely. Which is why I hate it when these things are called substitutes, replacements, fakes, etc. In my mind, if you are trying to sell walnut spread as "vegan cream cheese", I am automatically comparing it to cream cheese, and it will automatically lose because it's not cream cheese. But if it's walnut spread, I might actually prefer it.

Agar needs to be heated to activate. That's why you have to heat the ones with it in. Agar is a setting agent a vegan version of gelatine.

There are also recipes that only use agar agar, but I'm not sure how well those work. I saw it on brothers green/pro home cooks

I’m definitely going to give this a try. My family eats a lot of cheese, and the store bought vegan versions just taste bad.. Vegan cheese can’t taste like dairy cheese because they are made out of different things. Just like sheep, goat, and cow milk cheeses all taste different. If you go into these expecting a walnut cheese vs a cream cheese substitute I think one will have a much more pleasant experience.

My way of straining any dairy (vegan or otherwise), is to start with a wet cloth, line a strainer with it, put the strainer across a bowl, and then pour the semi-liquid into the cloth, covering it to keep the top from drying out.

And put a weight on it, to get it dryer, if that is desirable.

As a vegan you’ll find great vegan cheeses and awful ones, I’ve never tried making my own but may give it a go now. I know someone who makes vegan cheeses all the time and now sells them

I actually tried my first slice of vegan cheese the other day (along with a slice of regular cheese, on separate pieces of bread) and I was more than pleasantly surprised. Actually made me want to get some vegan cheese, just cuz it tastes good. The texture is so different too, I didn’t feel like I was eating cheese, but a different thing altogether, but it tasted good, so I guess that’s what counts?

I had a rice-based crescenza, perfect consistency and it tasted 80% like the real thing. The ingredients: Bio Su Rice 48% (water, integral rice sprouted 20,8%, salt, apple vinegar), water, coconut oil cold extracted, rice syrup, lemon juice. Thickeners: agar-agar, arabic gum, xanthan gum, carob flour, natural flavors.

I think the haloumi could've done with a little more starch, to keep it firmer once it comes out of the fridge. I personally think a brined tofu is a better haloumi substitute, tofu's got that squeak and it doesn't have the problem of starch retrogradation, so it remains firm and solid before, during and after cooking.

I actually just made some dairy free cheese this evening and it's setting overnight. I developed an anaphylactic allergy to dairy in the past 2 years. I'm not vegan or vegetarian, just dairy free. I'm super interested in checking out the recipes from this kit. I love the cheese I make from a recipe found online, but it would be fun to try more.

Hi Barry, you can make the same cream cheese or labneh by taking a pint of Greek yogurt, wrapping in cheesecloth, and suspending it above a bowl in your fridge for 32 hours. Add your flavorings and enjoy! 🐶🐶

The cream-cheese-alike would probably work well as a vehicle for other flavors, just like cream cheese. Some garlic and chives in there might work great as a spread for bagels.

I had fake Halloumi made from Coconut oil once which was suprisingly incredibly cheesy tasting. Wasn't much of a Halloumi substitute, but it'd be good at some other things.

I am pretty sure you could shorten the prep time for the nuts by using a pressure cooker ( or multicooker) i mean to make pea and ham soup it takes a whole 20 mins plus the time it takes to come to pressure as you do not need to soak the lentils over night just open the pack rinse and cook to make perfect soup every time .. maybe you can start doing some electric pressure cooker versions ??

Technically you cant make halloumi in other places then Cyprus. You can call it something else but not Halloumi.

I tried vegan cheddar cheese when I was experimenting with cutting out dairy (I’m lactose but I also have IBS - discovered no matter what I eat my stomach is still upset). I really liked the vegan cheese, it certainly wasn’t comparable to real cheese but the texture and flavor was really nice

I imagine you might have tried it, but Arla cheddar worked for me. Normal dairy = itching and bad stomach. As long as I don’t overdo the Arla stuff, I’m OK. (I did try vegan, but thought it was appalling. Also, a lot is heavy on the coconut and I can no longer tolerate that.)

My sister and Brother-in-law are both vegan and when we go to their house they’ll cook their vegan dishes and they taste good and my parents and I don’t drink dairy milk for like some years we used almond milk and now cashew milk

For the halloumi try reducing the amount of Cashews to 50% and boil them to soften them and blend whilst slightly warm (you'll get a smoother texture) add a tablespoon of refined coconut oil (has to be refined so you don't get the coconut flavour) and 1+1/2 tbps of glutinous rice flour (stuff used to make mochi) and 1 tbps potato starch or other dense starch and keep the other ingredients the same. That should help improve the texture and give that squeak. I've not tried this myself, but I was the pastry chef in a vegan kitchen for 5 years and I *think* this might work a bit better, it'll probably need tweaking though so don't shoot me 😂

one question with the mozzarella would be what kind of mozzarella was used for the comparison? if it was a mass produced cow's milk one, then it's not going to have the flavour of the proper buffalo stuff

Very good video I never think you can make vegan cheese at home. I sorry I have one problem with hallumi I not think you make correct. Hallumi cheese should be rest in brine?

Now, I'm lactose intolerant, so I wind up looking to vegan cheeses when I can. Interestingly, there was a vegan cream cheese I tried that was made with cashews and coconut oil. It had that slight cashew taste as expected, but then it had a sour greek yogurt sort of tang before finishing off with the coconut taste. I've no idea what they did in the process of making it, but honestly, I'm more interested in seeing if there's a vegan greek yogurt that pulls that off.

I got a vegan cheese making cookbook last year, but my adventures came to a halt because (and this is dumb xD) I really want to make that one cheese next and I need macadamia nuts for it and I haven't been able to find them all year? I already looked it up, the internet doesn't say anything about a shortage but there must be something...

I am lactose intolerant, but I would rather have stomach pain than eat vegan cheese. Most cheese is vegetarian unless it says otherwise. I do like yogurt made from almonds though especially the berry ones.

not to be that guy but i always found it intresting how much effort is put in by the vegan/vegeterian comunity to recreate non vegan/vegetarian dishes. i mean i understand things like milk (considering most nut milk is just a nut smoothy and that sounds way more appetising to me) but when we get to the meats and other dairy products, i just dont understand why they go so far to glorify the flavor of those foods if they are against their belives. lets be honest there is many amazing receipies you can make that are vegan, i mean if you would just count original things (non replacement meals) there is enough comunities/religions etc that have been doing vegan diets with out even attempting to make fake meat. but it does feel like ever since veganism became assosiated with (and i dont want to get too political) left side of the polical spectrum, there have been alot more push to force people to take on this way of life... anyway i know if i ramble on more i might step on peoples toes so far now.. gr8 vid mate :)

I almost didn't recognise your eldest daughter, she has shot up these last few months! Looking absolutely beautiful just like her mum and sister (you are beautiful too bazza, but Mrs b really takes the cake on this occasion 😂)

is phoebe vegetarian by choice or for health. my 16 yr old has NEVER been able to consume meat. he can do cheese and milk products and eggs. we tried him on meat baby food with and without other things mixed in. he would vomit and be very sick for hours after. we had him tested at 9 with an allergist no allergy just his body, mainly stomach can consume it.
