Honestly one of the simplest setups that I like is snow pea/strawburst. Snow pea effectively extends the track so that you have more time to charge strawburst. If you're feeling ballsy in your sun production you can swap it out for winter melon as well.

The zombie that wouldn’t die is actually in pvz heroes and he’s called overstuffed zombie. In that game his gimmick is that he heals when he kills a plant, so I’m pretty sure his gimmick in pvz 2 is that he heals/doesn’t take any damage when eating a plant. Hope this helped

Have you tried playing the crossover event? I think the difficulty is very similar to Holiday Mashup, it wont be too much of a problem for you. Not only that you'll get a new plant, you might be interested in playing the mod crossover'd with Reflourished, Alternate UniverZ!
