What a fantastic and great idea ! No more buying organic vegetable broth for me! One question please After you make the bullion cubes, wrap them in foil & put them in the baggie, do you freeze them ?

Spoon this mixture into ice cube trays or very small muffin tins and freeze them, then place them in a freezer bag for later use.

Mix in some flour or cornstarch after it's cooled and the "bouillon cubes" will thicken as well as flavor what ever you put them in.

Thank you for this recipe. I did try it, freezing on a lined cookie sheet. I then cut into squares, wrapped about 2/3 and put in ziploc bag in freezer. The other 1/3 I put in dehydrator and that worked out well too. I added onee to rice water as I was cooking for side dish with peas. Delious.

Note: One ingredient is a “turnip” but the English translation says “radish.” I wouldn’t want to put in an enormous radish by mistake. 😊 This recipe looks great. I’m definitely going to make some of these healthy, additive-free bouillon cubes.

This is excellent. I have never seen anyone make a broth like this. And when you add hot water to it it is a nice vegetable drink you can have in the winter. This is excellent. Also what is so great is you can freeze it! Thank you so much for sharing much for sharing

This will not work as a replacement for stock cubes. Stock cubes are made with dehydrated vegetables therefore have a very intense flavour. If making these vegetable puree cubes you'll need 4-5 of them to replace 1 stock cube.

I don't quite understand why the offcuts of carrots, turnips etc. aren't used or better still, save the offcuts from meals made, freeze them until there are enough ingredients and then make bouillon.

Providing they are scrubbed and washed thoroughly I also put the peelings in a separate pot and simmer gently strain and add to the mix.

@@Anne-pv9cb At our place we have to remove the peels because its very rare that our farmers have grown the veggies organically. Or you have to thoroughly clean them using soap and salt water to be sure that there is least amount of pesticide.

I come to a conclusion that they have to be kept frozen, unless we use a dehydrator but I am not knowledgeable on how long etc.

O zaman dondurucudan çıkınca, yaptığı gibi kesin, Küb şeklinde, ve plastik çantaya koyup güzelce kapatın, öylece de kalabilir dondurucuda 🤔 bence 😅 ama biraz birbirlerine yapışa bilir

The shelf life would be short. Only about a week. You could do a small jelly jar size and put in the fridge and then do the rest as she did by wrapping and putting in the freezer.

What happens to vegetables after a few weeks? They rot. Ofcourse you need to freeze these cubes. As long as something contains moisture, it needs to be kept cool ie fridge or freezer. Store bought boullion has the moisture sucked out, which is why it can stay outside the fridge.

@@AmA11291 Ja, aber er ist wiederverwendbar. Meiner hält mehr als 20 Jahre. Mittlerweile gibt es welche aus Silikon. Es gibt oft Alternativen.

Zwiebel, Karotte, Lauch und Sellerie in Walnuss Größe schneiden. Vorher schälen. Das Gemüse in Butter anbraten ohne Farbe nehmen zu lassen. Danach mit Wasser auffüllen und je nach Geschmack der Brühe 12 Std bis 1 Tag köcheln lassen. Später das Gemüse abpassieren und das Wasser auffangen.

I cannot use commercial boullion cubes and dried soups. They always have unhealthy amounts of salt, MSG, palm oil, garlic powder, artificial colors, etc. Thank you for a healthier, home made recipe.

Kleiner Tipp am Rande: auch getrocknetes Brühepulver kann man selber machen. Ich raspele Suppengrün klein, lege es auf ein Backblech das ich mit Dauerbackfolie auslege, salze es dann und stelle den Backofen so auf 80 Grad Celsius und lasse im Backofen das Gemüse darin einige Stunden (so ca. 6-8) trocknen...... Backofentür etwas geöffnet lassen (einen Kochlöffel am besten in die Backofentür stecken). Danach, wenn das getrocknete Gemüse abgekühlt ist, gebe ich es in meine alte Kaffeemühle (man kann auch einen elekt. Blitzhacker verwenden) und mahle das Gemüse so fein, wie ich es brauche. Mit dem Salz gehe ich grundsätzlich immer sehr sparsam um, nachwürzen kann man zur Not immer.

Looks awesome! My mum can’t eat garlic but it’s basically impossible to find any soup/stock product that doesn’t have garlic so I’m definitely going to make this for her to keep on hand!

Ich denke man kann auch Gemüsesorten variieren. Ich darf auch keinen Knoblauch essen, statt dessen hab ich dann noch eine Schalotte klein geschnitten. Ich hab auch schon Pastinaken (parsnip - heißt das, glaube ich), Petersilienwurzel (sieht so ähnlich aus wie Pastinake, schmeckt nur etwas anders) und auch schon Tomate (abgezogen und entkernt) mit reingemacht..... war auch sehr lecker.

Mit Alufolie einpacken? Nicht sehr gesund und zudem umweltschädlich. Man könnte auch feines Pergamentpapier verwenden.

Gutes bio Gemüse muß bzw sollte NICHT geschält werden , nur gut abwaschen evt Bürsten & man erhält alle Vitamine etc.

Prinzipiell ja, aber auf möhren können bei Karotten von dem Dünger, sprich den Ausscheidung von Tieren, E. Colis usw. Dran sein. Zumeist bekommt man nichts davon mit, da es wenige sind, aber ab und an kann das zu recht langwierigen Krankheiten führen. Es sind eigene Erfahrungen
