To Make Idli Podi
Oil - 2 1/2 Tsp
Chana Dal - 1/2 Cup
Urad Dal - 1/4 Cup
Peanut - 1/4 Cup
Roasted Chana Dal - 1/4 Cup
Red Chilli - 10 Nos
Kashmiri Red Chilli - 10 Nos
Grated Coconut - 1 Cup
Garlic Cloves
Few Tamarind
Rock Salt - 1 1/2 Tsp
Asafoetida Powder - 1/2 Tsp
Sugar - 1 Tsp
Method:
1. Take gingelly oil in a pan and add chana dal and urad dal.
2. Roast them for about a minute and then add peanuts. Roast them until they are golden brown in colour.
3. Add roasted chana dal and roast for 2 mins. Remove them from the pan and cool them down.
4. To the same pan, add gingelly oil again and drop in the red chillies along with Kashmiri red chillies. Roast until they change in colour and remove them from the pan.
5. Take oil in the same pan again and add grated coconut, garlic cloves and tamarind bits.
6. Roast until they are all golden brown in colour and then remove them from the pan.
7. Put in the roasted red chillies in a mixer jar and grind them into a fine powder.
8. Then add in the roasted dal mixture in two instalments and keep grinding to make sure they are all well blended.
9. Lastly, add in the coconut mixture, rock salt, asafoetida powder and sugar. Grind it all into a fine powder.
10. Tasty and flavourful Idli podi is ready to be served with hot idlies and ghee.

Although the name is one and the same, every state has it's own style of making Idli. But wait, that's not what we are going to see now! My focus today is mainly on the magical Gun Powder or Idli Podi as we all lovingly call it. This Podi is a total gamechanger for a normal, simple, decent Idli which is very plain in taste. It adds a lot more drama when is sprinkled on a piping hot idli with some ghee generously poured on it. Don't you think that reading this is even more is just killing time? I take the mtr gun powder .. It's usually without garlic.. I mix it in curd n temper with groundnut oil in curryleaves aseofotida mustard seeds.. Making this a chutney.. 🥰

Most times when I was eating Saiwar food, get this Idli podi & I loved. It has a unique taste to it & I've eaten with Urad dal wada/Dosa as well 😋. I have all the ingredients except Asafoetida. Must try out this recipe one day... Thanks Hema ji! 💐

Thanks for the wonderful recepies. I have 1 query on this one. Usually pulses and grains come with preservatives so usually people wash them before using. In this case can i wash and dry roast them instantly then use it? Roasting wil dry the left over little water around it.. but does it effect the shelf life? Or should i dry after rinsing through water? Curious to know..

The only problem with podi is that it needs the unhealthy oil to go with it. Otherwise podi itself is very healthy.
