Personally I like how Eltharion can capture someone ridiculous like Skarbrand or Mannfred and then just never give them back to their home faction. Try fighting off the Tomb Kings or Dwarfs without your best assets!

To be fair that really is a rather potent trait, just remove the faction leader from play entirely for possibly the entire campaign, all off one victory.

In my most recent Eltharion campaign, I have ultimate crisis on and had it trigger early. I have fought and captured so many crisis generals and indoctrinated them, that I am gaining over a million gold every single turn, and it keeps scaling up. Economy means nothing to me, and I am a god among lesser beings. Just as the Entrepreneurs intended.

Ok, but the greatest thing about that dungeon is the fact you can just deny a faction their legendary lords. Thats really powerful. Heck, even powerful high level generic lords is pretty sweet.

I used it to keep Skarbrand out of his armies until I executed him right before taking his capital, but you can also use it to get buffs by keeping certain faction lords in the dungeon, or interrogate them for buffs

I"ve always enjoyed that the vampire coast lord serves himself up on a silver platter to you on his treasure hunt. It's like the game is begging me to make my ranged yvresse units absolutely bonkers. Having a dark elf, vamp coast, and a chaos prisoner in the jail has been very very benefiecial for my mistwalker stacks.

Eltharion in WHFB never really interested me, but in WAoS I actually like him a lot more, since he's basically just a ghost in a suit of armour.

Eltharion stands out to me because he is just a factory of "go fuck yourself" WRT his units; just churning out endless streams of archer/spearmen hybrids that will continuously chew up his enemies and fielding a bunch of S tier griffin riders. Also shitstomping through the world in order to prep your doom fortress in 150 turns during WH2 *chef kisses*

There is a cheese strat where you take Tralinia with starter army there, then sell Tor Yvresse, allowing you to take both Ulthuan and the Badlands, then simply trade with Tyrion or confederate him to get it back

If I remember right, right after Eltharion beats the brakes off of Mannfred the Manchild, Arkhan the Black grabs his wrists from behind and turns him to dust, then continues necromancing. Mannfred getting clapped? Fantastic. Getting dusted on contact and promptly ignored? Very unfortunate.
