I am a veteran sushi chef... 30 years... Had my own sushi bar for 15 years . Salmon is my personal fav .. but this is an extraordinary amount of fish for, not only one seating, but 20 minutes. The salmon looks perfect... Only one ingredient... This is masterful. Amazing.

Awesome, Joel. A Kokiak Island Brown bear is one of the only animals that can out-eat you. Those male bears eat ~6,150 pounds of salmon per year. Favorite sushi: Uni, Maguro, Hamachi, Ikura, Ika, and tako. But, I'll eat it all.

While I love sushi, fish wise nothing beats a good fresh fried bluegill. Growing up in Michigan, the colder the water the gill comes from the better. Don't get me wrong, I do like salmon and such, but bluegill is where it's at. I'm also the odd one when where don't come near me with lemon or lemon pepper fish, the worst way for me...

Most sushi bars serve farmed salmon, because the fish is fattier, milder and tastes better. I've been doing this for 30 years+ so, that's the real. There are some sushi bars that will offer you a choice. With today's farming methods, and a certified farm sources to buy from... Joel, just to warn you about the Norwegian salmon, is farmed salmon and toxic like no other salmon. Search about it and see how much havoc and pollution and destruction these farms are doing, just letting you know. These salmon are fed rubbish and added colour to the stuff they feed them, pure wild and line caught salmon is expensive and rare these days and specially in those big industries as sushi restaurants.

Yeah, salmon spend time in fresh water for one thing and species that spend time in fresh bodies of water are significantly more likely to carry parasites that take up residence in humans. This is all likely farm raised fish however, so it's mostly marine nematodes that are found from seal droppings and such. Even if they are harmless, i just can't do raw fish, i've seen them riddled and wriggling so many times, disgusting for me personally.

Absolutely amazing as much as I love salmon and I love salmon I would be afraid I would never want to eat it again so I hope this works out for you As silky and delectable is that salmon looked I couldn't do it all at once fantastic as always🎉🎉🎉🎉🎉
