My family has been enjoying a vegan lifestyle for about 3 years now. For health reasons we eliminated oil, sugar and processed foods. The results have proven what a whole food plant based diet can’t do for your health, we eliminated statins. We have avoided the trendy meat replacements as they are full of oil. At 3 years in we were craving flavor again… then I tried your French Apple Cake and we were hooked. Loaded cauliflower is awesome. Baked Beans are awesome. Baked eggplant dish so amazing my husband said he could eat it for 2 weeks straight. Tonight I am making the Bundt cake. It will come out of the oven just as he comes home from work. Hello Jill. This cake looks so good that I am going to have to make one! Here is a tip to ensure the cakes you bake stay nice and moist. Add a teaspoon of vegetable glycerin to your cake batter. A French pastry chef gave my mother this advice years ago and it always works. Happy baking

Did you double the recipe or keep it as is? I'm looking at my bundt cake pan, thinking I should double it so it looks bigger. I notice her pan is a little more narrow at the bottom.

Hi Jill , just made your beautiful ginger cake , Amazing ! ! ! 🙏 we have a cake similar to this in Scotland called Parkin , it's oats , ginger & molasses , golden syrup . Just finished my second slice of this yummy cake!! Easy to make…even found my Bundt pan I haven’t used for years to bake it in. Up here (British Columbia, Canada) it needed about ten extra min bake time.Thanks again- gotta get your cookbook!!

They are not getting blended fully. Your blender might not be powerful enough to blend them smooth. You can always let them soak in whatever liquid you are blending them with for about 30 minutes before blending

This looks amazing, thank you! Btw, how do you measure your dates? I usually fill a measuring cup with water and then pit them and put them in the measuring cup to measure out how much I need (e.g. if I need 1/2 cup of dates I'd fill it up with 2 cups of water and add dates until the water line reaches 2 1/2 cups).
