In a word POP! That's what he has done. It's clean and uniform. It's simple.It's inviting. Easy in easy out. Essentially a high-end grocery store experience. Even his choice of shirt. No clever saying. Bright artwork draws more attention then your slogan here. Thanks Diego. Have a great week.

Dawn Breaker is great stuff! Glad you got to sit down with him. I need to get some more info about his Poultry Processing - we don't have a lot of options in our area.

Ben and Diego have a course on Poultry processing for sale, where they talk about a lot of the particulars in depth. Regulations vary by state. But joining APPPA can help navigate those waters.

Good info Diego. Thanks for taking the time to get nearly all the info for us. I’d like to know a little more about local regulations and how that works for selling meat at the farmers market. E.g. Does the poultry need to be processed at a inspected facility? Are there inspections at the farmers market to ensure temps are within spec?

@@grocefamilyfarm3062 Thanks we are trying this method it just seems like a lot of coolers for not much product. Then a replacement large cooler also. We looked at the 28qt but we sell more breasts and thighs etc than would fit in one. Then trying to fit two products in each one was hard. We ordered a 35qt to see if that was better than all 50qt.

@@crk9training850 I definitely like going with matching color, hinged ones that are small enough that nobody has to wade through pounds and pounds of meat to find what they want. The 50 Qt is nice for whole chickens, roasts, etc. I can put 30-40 lbs of sausage, ground beef etc in the 28 qt. So it works nice for having 2-3 different items, some of which I might plan to replenish if I know they are popular. In the end, it’s about encouraging browsing, looking nice, easy quick self-service, and low barrier to purchasing.

@@crk9training850 I have 2 kinds of breast (bone-in and boneless) in a 28 qt and all my dark meat in a 50, and whole birds in another 50.
