One thing I do when making bread and it works if you live in cold dry areas is boil a large pan of water while the dough is needing, i put dough in a greased bowl and put it in cold oven, then I put the boiling water in a 11X14 pan and place it on the bottom rack of the cold over and close the door. The steam coming off and the heat make the perfect proofing environment with high humidity and warm but not hot conditions.

What I like about sandwich bread is portion control. I make two loaves, let them cool, slice them, then throw them into the freezer. They stay extremely fresh for about 2 weeks using the defrost setting on the toaster.

I mighy try this because my bread, using many different recipes, turns out nice. Problem is 2 days later you may as well call them croutons. Even tried vacuum sealing them in plastic bags.

When you think your bread is ready, take the internal temp. Bread is done at around 190-210 internal temp 👍🏻 I love trying new sandwich bread recipes! I tried your first one and I agreed it wasn’t dark enough for my taste. But I can’t wait to try this one! Thanks for sharing Larry!

Our wheat is crap. Not real. It’s frankenwheat which is why I can’t eat it but have no problem with it in Europe.
