I know YunNan is famous for mushrooms, and I heard people got poisoned from eating mushrooms from time to time, and it won't stop them from eating mushrooms after they are recovered. I learned from the video that restaurant have some mechanism to protect customer from getting poisoned. That encourages me to try mushroom hot pot next time. I'm glad you had great experience. If you want to know if a mushroom is poison or not, just use slices of ginger. If the ginger turn black, throw away and DO NOT EAT. If it is normal yellowish colour, go ahead.

To be on the safe side it’s better to choose a reputable restaurant know for this special delicacy. Like they say they have to prepare it properly and cook for longer time. You will be fine. I have tried it 3 times when I visited Yunnan in the past and it’s delicious.

Wow, I wonder how many types of mushrooms totaled? It is good to know not to eat mushrooms before cooking them for 25 min. I have gotten food poisoning before after eating mushroom and wonder why after I did cooked it. But reflecting back, I don't think I cooked it enough. Enough spiciness is good, but more than that, it is not enjoyable. Only problem is, if you keep on pushing the spiciness, you will be able to eat more spiciness, but your entrails will not adapt as quick, and it will not come out very well. The first one you put into your bowl is probably vinegar since the color is lighter. The soy sauce should be darker. The room feels like the heater is on because of all the hotpots going on. I would probably skip adding the mushroom soup to the dipping sauce. Too bad Dad doesn't speak English enough or it would be much more interesting to hear him explain the history and culture behind the food and scenes.
