Taku's taco Tuesday's, makes every taco Tuesday I have ever had seem mediocre. He turned probably the prettiest fish I have ever seen into a delicious and vibrant dish with ease. Wish I had even a percentage of his overall skill, but I have admittedly gotten better just by watching him. Thank you, chef!

I spent 2 years living on that island in the 60's. Loved it. Those rocks along the beach are a fond memory. I had some friends that lived in Oyama. I spent most of my time in Naha area. Good times.

I know you've spoken a lot about how 9/11 really messed up immigration for your Dad and it's a bummer losing time growing up with him, but when I see Mitsuki, I just see someone with such vibrancy, openness and energy. Taku, that is so amazing man. I remember catching my first Mahi strangely close to shore off Oahu. I’ve caught hundreds through the years in the Kaiwi channel but this was just strange brah. We’d just finished escorting a canoe race that started on Molokai and finished in Waikiki on Oahu. Long weekend with friends on Molokai, barbecuing our catch of Ono and Mahi at the beach house in Kaunakakai. Huge Molokai style party before the race back to Oahu Sunday morning. At first light, Hale O’Lono harbor is surging as all the escort boats were getting under way. Everyone has a hangover from the night before and it’s running as smoothly as it always does, finding our paddlers. We came in 16th I think out of a hundred fifty canoes. Our home of port is Kaneohe. Heeia. Way around the island. No problem. We pulled anchor in Waikiki the next morning and decided to slow-troll Opelu along the outer reef toward Diamond Head buoy. Wham! Smack down on the outrigger. But nothing. A (hit and miss) right on the buoy. We circled back and we got hit again but it didn’t stick. “What the hell is this? It’s a smart fish for sure. Could be Ulua, barracuda, who knows? I decided that this fish can see the wire leader and isn’t committing. So I buried the leader in a fresh Saba so it couldn’t be seen by any damn fish. Head hook and tail hook. Stainless wire invisible in the middle of the bait. Took another pass by the buoy. WHAM! Got you. It’s jumping around doing summersaults, it’s a dinker Mahi Mahi. Wild. In so close to shore. I surf out here. Never imagined a small Mahi under my feet. We trolled the Kaiwi channel for decades but this dinker Mahi off Diamond Head buoy was wild. Fish see wire and don’t trust it. Burying it in the bait is what fooled this fish. The smaller mahi are the best eating. Sweet and mild, flaky and just perfect in a garlic butter sauté. Thanks Taku for this incredible Japan adventure. There’s a reason so many Japanese fishermen live in Hawaii. It’s No ka oi. (The best). Aloha my friend. 🤙🏼

I fished off some rocky cliffs near Cape Maeda Okinawa and hooked into something very big. I saw it hit my spoon and it snapped the line almost immediately! Definitely got my adrenaline going. Okinawa is such a beautiful place!

awesome to know mahi mahi exist in japan waters. i always thought they were only in the gulf/mexico/florida/bahamas region. if you want them to come in easier and stay, a chum block in a bag will help.
