Appreciate the hardwork. Lot of vendors in India still use newspaper for storing or packing food items which should be banned as the ink is toxic/poisonous. He is serving in banana leaf which is very good but at the same time using newspaper to store the vadas to absorb the oil. Lot of people have commented about cleanliness which is true. He needs to be educated about cleanliness of the kitchen and all the equipment he is using.

... watching from delhi........ that taste we don't get in any of the restaurant here .... even in south india .. the big restaurant will not provide the taste .. its only possible in homely tiffin centre managed by self run cook want to start one tiffin centre like this in delhi.. but i need to get trained from people like him for 1 year

I've eaten in small outlets. Oil is more new than large hotels. Don't judge a book by its cover. Idhula admin ku perumai vera. How do you conclude that the oil may not be clean? Do you even have data to back it up? Gas stove not being clean doesn't impact hygeine. If you felt so uncomfortable, stop visiting such outlets. Nobody asked you to. :P
