Joe will always be consistently the funny guy but Harry’s arc from being the straight man in this duo to being the subtle comedian now is so charming. When he said “our job is so hard. We are so brave” in the most deadpan way while savoring his fancy steak, and then having the server break character and laughing outloud after calling him potato bae... 😂

probably one of the best food series I've seen. a lot of the other guys/gals i watch have been pretty stale. but this dynamic duo and just the variety of the scenes is amazing! love the work you and the crew is putting in.

I just want to reference this for people who don't know; in the second steakhouse where they eat Vaca Vieja, traditional meat cattle are sent to slaughter at age 2, which means these cows lived 4-5x longer than traditional cattle do before being processed.

Jose Andres is one celebrity chef who's known consistently for his amazing delicious food, but also for his awe inspiring philanthropy/activism. His world kitchen is one of the most practical and gracious and courageous support organizations, feeding people in tragic, catastrophic conditions.

You can definitely get those steaks at a good butcher, especially in Vegas. I live here and Butcher Block carries some high end cuts, including Australian Wagyu.

Joe… you can do that at home… well seasoned and then sous vide, then high heat sear and you’ll have a steak just as good for less then half the cost

I agree with Joe's opening remarks about what he is looking for. Apart from perhaps a little butter, adding sauce should be unnecessary. Seems pretty expensive but I guess that is the venue as much as anything. But then I like my steak medium-well to well. As usual, watching the difference in the use of the cutlery between the two of them is entertaining.

Bananas Foster was created in New Orleans, Louisiana in 1951 at Vieux Carré Restaurant. Invented by Chef Paul Blangé and Ella Brennan, it was named after Richard Foster (Chairman of the New Orleans Crime Commission) and a friend of restaurant owner Owen Brennan. It's still being currently served at the restaurant Brennan's in NOLA.

I would like to add some information about wet aging and its role in beef production. Wet aging is the process of vacuum sealing a cut of beef and refrigerating it to allow the microbes within the beef muscles to begin the process of breaking the meat down, which makes it more tender. This process also allows the beef to remain moist - a very notable difference to dry aging where you want the beef to dry out to some extent, which will concentrate the flavour. With dry aging you will lose a substantial portion of the beef muscle the longer it is aged, which does not happen when you utilise wet aging. You will usually find a steak has been wet aged for around three or four weeks, but the microbial load within the beef will remain active for upwards of five to eight weeks so, though rare, you may occasionally find steaks that have been wet aged for longer than four weeks. Wet aging does not give you a "sloppy steak" as Joe eluded, and you may be surprised to learn that worldwide most beef that is available in a supermarket is wet aged for at least three weeks. Beef from a steakhouse can be either wet aged or dry aged, or quite often you will see both aging methods utilised.

Wet-aged steaks are aged in vacuum-sealed bags, while dry-aged steaks are exposed to air.

I'm a professional poker player from Bensonhurst Brooklyn born and raised so because of my job im in Las Vegas alot golden steer is imo the best steakhouse in Las Vegas it's just unreal I've never had a bad meal there also their ceasar salad made table side king crab legs and lobster tail are amazing and the staff are also incredibly friendly and helpful
