Panettone is famous for its tangy flavor and yellow, soft and gooey dough that is unlike no other. The secret behind it is an Italian yeast called lievito madre, or mother yeast. It gives a panettone a tangy flavor and just the perfect texture. But it’s not an easy yeast to work with: you need time and patience to master it. In Milan, the birthplace of panettone, lievito madre is the one and only yeast bakers are allowed to use. We visited Pavé, a local bakery, to find out what else makes Milanese panettone so special.

Fun fact, here in Italy panettone is so common you get tired of it. And right after the holidays supermarkets will sell you even the good ones for pennies (if you still want to eat panettone)

Having lived in Milan and now locked away from returning (darn pandemic), panettone holds a very special place in my heart, as with it return all the magnificent memories of Milan, Verona, and the north of Italy. Che peccato! L'Italia mi manca ogni giorno.

I've tried to make panettone at home, but now I understand why it came out like a bread. Such a complex process. No wonder the price they charged. This year I ordered an Italian panettone, so exited about it. Great video!

@@shesh32 Usually a 700 gr Panettone from Italy starts at 25€, and can go up to 40€. Depends on the brand.

Back in the 80’s, I lived near an Italian grocery in Montréal ( Milano if you’re interested) that I absolutely loved. I was not, however, into Panettone! In fact, I thought they looked rather like dry raisin breads. I kept seeing people buy those boxes by the armful and I could not figure out what the deal was until one day I saw a well known journalist doing the same. That peeked my curiosity so I bought one. OMG, it practically changed my life. I have to restrain myself because I would eat it everyday, and lots of it. JUST TRY IT !

I can honestly say I thought very similarly of them until I met my partner and now I buy at least 2-3 if not more during the holidays and use it like white bread for a bunch of different things. It makes really great bread pudding too!

I'm Asian and Panettone was very new to me when I arrived here in Toronto years back. I first lived in an area populated mostly by Italians and ever since my previous neighbour, who was one, gifted me panettones one christmas, it's been my go too holiday cake. When I say go too, I mean I buy up to six panettones with different fillings every time and even go back after the holidays to score the discounted ones. They're that good and can be kept for quite a while. I love eating it with black tea!

I'm really lucky to be born in such era. Maybe I'll never visit Italy & eat this dish... But, at least I do know that... Their are different cultures around the world & so much Dishes are present & they're preserving this History & Cuisines. It's so nice to watch & imagine eating this dish.

Panettone means Christmas to me. But like some others here I would eat it in lady like portions until it’s gone. How does it manage to stay fresh so long?

@@muffieo1 you can freeze it, it works well Here in Brazil, it is common for small bakeries to make panettone all year, so they are relatively ready available all seasons

My parents are from Argentina. This stuff is consumed en masse during the holidays. Definitely evokes memories of my childhood! I can almost guarantee that when we gather for xmas this year, there will be a panatone on the table.

Hahahaha! I am Chinese live in America buy I fell in love panettone ever since my very first taste 10 years ago. The soft texture along with orange tensed aroma melt my stress away. I prefer panettone to any other deserts.For me it is a all year around desert, but especially at Christmas 🎄 Now I made it few time at home with semi success. Still trying hard to make it better.

@@ScumfuckMcDoucheface yeah bro I don't really think that's the case here but I'm not 100% sure. What I do know is that as far as I can remember it's always been a very strong Christmas tradition. So much that even many countries in Latin America (Perú, Brazil, Argentina and many more) eat it during Xmas thanks to the Italian migration

Italians landed in Brazil as immigrants years 1890-1920. They after 4/5 generations are not more Italian. They're Brazilians of Italian descent, like Bolsonaro.

It's very popular in Poland around Christmas time. It's available in any supermarket. I've never know it's called Panettone. My parents always just called it "Christmas babka".

My Italian mother always made Panettone for Easter and Christmas. Have never been able to make it successfully. Failures were still tasty but not Panettone. Now Pandoro is the one that I can make quite well. Regardless, Panettone is considered a holiday staple in our home and when we visit others (before pandemic) we would always bring one as a gift or my homemade Pandoro. Thanks for this great vid showing the process!

peruvian panettone is usually drier (no levito madre) and instead of raisins and orange peels they put dry watermelon skin dyed in different colors. It has nothing to do with Italian Panettone, the only thing they share is the name.

@@alfrredd I'm not convinced by your response.. It will be like an American saying that pizza is a traditional American recipe only because they eat it with slices of pineapple on it (something that an Italian would never dare to do..) It doesn't make sense

@@calasalos I'm in no way saying panettone is peruvian. Only that the one they make is extremely different from the original recipe and It should probably be called a different name. Also, Americans CAN say New York style (or whatever other regional recipe) pizza is a traditional NY recipe the same way Peruvians say (Peruvian) panettone is Peruvian.

@@alfrredd In no way is "extremely different", it's the same as a large scale, non artesanal Panettone.. Many Italian products are imitated or counterfeited in other countries (mostly China) like Parmesan cheese, Nutella etc.. and this is very annoying for us

I decided to make my own pannetonne at home last year. It was great (nothing to compare with his one though) yet it took me forever. I kinda enjoyed the whole process, I shall be making it once again this year. 😁 Artisanal foods are the best!

Here in the USA I’ve seen the Panettone become more popular, of course imported from Italy. I see it everywhere, haven’t tried it yet though but this videos makes me excited to pick one up.

The ones in the states are prob more and more awful! I would say if you could order it from a place like this, I would try to do so. I don’t eat this anymore, as I don’t eat eggs, but I’ve eaten pannetore since I was a kid. I’ve had bad ones and decent ones, but nothing like this! This one looks amazing! I think it’s been popular at least in NY since I could remember, even before those big commercial stores. Well at least we’ve always had it in our home (I am a bit Italian and South American). Someone had just bought a commercial one for my mum and it looks pretty nasty. Nothing like the video! -You could also try a legit Italian grocer, they may have decent ones. I would even try a tiny bit if I could from this place, it looks amazing! Best

Even the cheap grocery store panettone are quite tasty but the proper artisan loaves? Absolutely divine. They cost a small fortune but damn it, they are worth every penny.

I LOVE Panettone and got one of those gigantic ones as Costco, just before Thanksgiving and I THINK it lasted a week. I do NOT want to get another or I won't be able to zip the jeans I just go back into. It's good stuff.

I came here to learn how to make panettone at home. After watching this, I've lost my will even attempting it. It will take much less time and effort to go to Milan on foot and buy the real thing. Now, seriously, amazing video. Those look amazing and delicious.
