Method:
Instant Pot Coconut Yogurt -
2 cans coconut milk
yogurt culture or 2 tbsp coconut yogurt
1 tbsp sugar
- Keep coconut cans in fridge for a few days
- Scoop only the coconut cream at the top of the can into the instant pot
- Add yogurt culture and sugar
- Whisk thoroughly and put on lid
- Press 'yoghurt' and set for 18 hours
- When finished leave in fridge overnight for thick, decadent yogurt!

The packet usually specifies how much to use as they vary. In the video you'll see I only use a very small amount of the one I buy.

Thank you for this video. If I wanted to make this on the stove top as opposed to the instant pot, would I boil the coconut milk on the stove top to 185 F ? Cool down to 110F and then add probiotic, mix well, cover mixture with a cloth... put in oven (off mode) and let it sit for 8 hrs?

I haven't tried that with coconut milk though I have done a similar method with cashew milk. It worked quite well but not as good as the instant pot with yogurt culture method. Good luck if you try it, it may work fine with coconut cream. I'd be interested to know how it turns out if you have the time 🙂

jukes243 yes as it’s what the yogurt culture eats to ferment and make the yogurt, it won’t taste sweet as the culture eats all the sugar. An extra tip - use the instant pot large lid instead of the glass one I show in the video, after making it a few times I feel it turns out better with the big lid

It's the yogurt setting 'normal' I show it at 0.55 seconds. With newer instant pots the setting is 'med' for medium.

Can you use coconut cream for this recipe or does it have to be coconut milk?

Carol Carlson well you make own very thick cream by leaving the coconut milk in the fridge for a while. I’ve tried with cans of coconut cream but it didn’t work, however cream from refrigerated coconut milk does :)

@@josiestory306 I just put the cans in the fridge still closed. I don't know if honey or syrup works , the culture eats the sugar which helps them make the yogurt, so it's not to make the yogurt sweet, it's to feed the yogurt culture

@@josiestory306 Honey is generally not recommended because it has its own "cultures" (read: good bacteria) which may interfere with the yogurt culture.

Why is it necessary to keep the cab in the fridge beforehand? Does it change anything?

Mario Westphal putting the can in the fridge makes the coconut cream come to the top of the can and separate from the water. You only want the cream for this yogurt recipe, you can use the remaining liquid in a smoothie or cooking.
