Instant Pot Shrimp Boil delivers all the classic flavor of a southern Shrimp Boil MINUS the effort. This is a simple dump-and-cook recipe that comes together in less than 20 minutes!

Recipe:
2 pounds red potatoes cut into 2-inch chunks
12 ounces smoked sausage cut in 1-inch slices
2 ears corn cut in thirds
2 tablespoons minced garlic
3 bay leaves
1 pound raw, frozen jumbo shrimp
8-12 ounces light beer or stock see note
2 tablespoons fresh lemon juice divided
2 tablespoons Old Bay Seasoning
3 tablespoons butter melted
1 tablespoon parsley minced
Layer the potatoes, sausage, corn, garlic, bay, and shrimp in the inner pot. Pour the beer or stock into the inner pot. Be sure to use 1 cup of beer/stock for a 6-Quart Instant Pot and 1.5 cups of beer/stock for an 8-Quart Instant Pot.
Pour 1 ½ tablespoon of the lemon juice over the shrimp and then sprinkle with Old Bay.
Place the lid on the Instant Pot and be sure the vent knob is sealed. Set to cook on high pressure for 2 minutes.
Once cook time has elapsed, do a quick release of pressure.
Combine the melted butter, parsley, and remaining ½ tablespoon of lemon juice together in a small bowl. Pour over the shrimp mixture and toss to coat, removing the bay leaves as you come across them.
Serve immediately

I made this for dinner tonight and it was absolutely amazing. I had been eyeballing this recipe for a few weeks and had a long day at work today so I figured this would be quick and easy. Everyone in my family loved it and we will definitely be making this a staple in our house!!

Made this for my Birthday, it was delish. I wish I would have made the Spice mix, I bought the Old Bay at the store. OMG Salt Lick, and really heavy on what tasted like Celery, it just did not seem like a balance mix of spices. I will keep experimenting and this recipe is a great place to start.

Have you tried the Old Bay 30% less salt one? Garlic can help cut the taste of the celery. I use fresh garlic but powder can be fine too. The homemade recipe you can control the amounts and make it more to your likening. Just remember potatoes do absorb the salt, so you don’t want to take to much away. Anytime something is over salted a raw, peeled potato cooked in the dish can help absorb it and save the dish in most cases. Just don’t over cook the potato to mushy. Taste as your cooking it. I’m a heart patient so it’s little tricks I learned from my family growing up so I could eat without swelling up like a balloon lol.

I too have a chronic illness. I have psoriatic arthritis. Instant pot is a dream and Deneen it’s done and there’s leftovers I put my rubber top on my pot and but it in the fridge for tomorrow because tomorrow may be a bad day. Bless you and thanks 🙏 for your recipe

This turned out amazing ! I've now done this similar meal three different ways. Foil wrapped on the grill, aluminum pans in the oven and now your instant pot variation. This is my favorite !!! The only thing I did differently was that I sliced the lemon last and put the slices on top of everything. Very delicious and thank you. Oh ... also decided to use stock and drink the beer while waiting 🤣

What state are you from or state your recipes come from? I’m from Louisiana and this is very different than ours. Each southern state does the same type of meals with some differences. I only ask because when I use a recipe and asked about it I can tell my guest it’s a southern ___?name of state?___ recipe otherwise I won’t use it because of the style of dinner parties we do with guest and they do with us. Guess it likes Tastes of the States. We all like to try different areas of the. Country and the world and keep the meal based around where it came from. Our guest or when we are theirs try to figure out the place/state. It’s really fun once a month to do with friends. Yours sounds like a FL or east coast southern style where our normal cooking style on a day to day basis is more Cajun and sometimes Creole. We even have a little Texas on some of ours. It looks amazing!

In my opinion, it all comes down to how you cook it. Cooked right, it should not be rubbery.
