Instant Pot Shrimp Boil Recipe | Low Country Cookout

This quick and easy Instant Pot Shrimp Boil recipe is loaded with perfectly cooked potatoes, sausage, corn and jumbo shrimp, then doused in seasoned butter.

INGREDIENTS NEEDED:
1.5 lb baby red potatoes
13 oz andouille sausage, cajun style or smoked, cut into 2" segments
3 medium ears of corn, cut in half
1 cup onion, chopped, or pearl onions peeled
1½ cups chicken broth
1 tbsp hot sauce, cayenne pepper sauce
4 tsp old bay seasoning, divided
2 lbs shrimp*, frozen, extra large (13-15 per lb.)
¼ cup butter, melted
1 tsp garlic powder
parsley, freshly chopped
lemon, cut into wedges
I'm using an 8 quart instant pot (amzn.to/2SmrdCl), but this recipe will also work in a 6 quart.

I was 100% a skeptic of this..this is the first recipe I ever tried in my instant pot and all I can say is WOW. Follow her step for step and you’ll be fine!! I used Slap Ya Mama Cajun seasoning instead of old bay and it was great. This came out so so so so good! And I used frozen corn because, well, it’s almost November in the northeast. Thank you so much! Home girl knows what she’s talking about!!!

1) Quick tip, I always take a damp dish cloth or small rag and lay it over my release valve for my Insta pot so that the steam doesn’t fly up in my face or hit me. 2) I really like this recipe and idea, coming from the south I love shrimp and crab boils. But I never thought about doing a small batch on my Insta pot. Thank you

I have tried some of your others and really liked them. Not so much on this one. Kinda bland. I put the onions in like you did but they were still just mush. Everything was cooked perfect. Just not any flavor that would be in a low country boil.
